JHATPAT PANEER CRISPY

If u have half of paneer block in ur freezer, then this is the best starters for kids after coming from school as the spiciness level of this appetizer is mild. Very simple, tasty and easy recipe done in a min with minimum number of ingredients easily available at home.


INGREDIENTS.

5 Pieces of Paneer.

1 tsp Tandoori masala or Garam masala.

Pinch of Turmeric pd.

Pinch of Pepper pd.

1/2 Cup Breadcrumbs.

Oil for shallow fry.

Salt to taste.

METHOD.

Marinate paneer pieces with the above ingredients except breadcrumbs and oil nearly for half an hour. Heat oil in a pan. Spread the breadcrumbs on plate. Now take paneer pieces and coat it nicely with breadcrumbs and shallow fry till slight brown. Repeat the same with the remaining paneer.

Serve hot with the ketchup.

DATES CARROT KHEER

Few days ago, I bought lots of carrots and I was planning to make carrot halwa. But I changed my mind and ended up making carrot kheer which came out really delicious and yummy. Here there were 2 main ingredients as one is carrots and other is the dates, where I wanted to keep its own sweetness in the whole recipe. So its very healthy and nutritious as therez absence of sugar. Both kids and adults will enjoy having this delight. For extra tasty kheer try adding almond milk instead of normal one. Do try this :)



INGREDIENTS

2 Small Steamed Carrots.

2 Cups Cold Milk. ( 1 cup hot milk)

8 to 10 Dates (seedless)

8 to 10 Cashew nuts.

Pinch of Cardamom pd.



METHOD

Soak both dates and cashews in 1 cup of hot milk for half an hour. Now grind the carrots first followed by the soaked dates and cashew. So that its well grind ed into a smooth thick paste. Now add milk along with the leftover soaked milk and cardamom pd and blend it thoroughly for about 1 min. Serve chill with a cherry on its side or garnish with dry fruits just as u like it.

PANEER TIKKI CUM SANDWICH

Paneer tikka's is the best and perfect starters which can be baked or grilled or fryed. Since I dont have oven yet, I have shallow fryed. It can be cooked with different variations with different ingredients as one wish to prepare it. In this, the strong flavour of mint is well combined with the mild texture of paneer. If you have left over tikki's, then you can make a dinner itemby sandwiching between buttered or with ur fav chutney applied breadslices.



INGREDIENTS.

1 Cup Grated Paneer.

1/2 Cup Boiled Potato or 1 or 2 Breadslices(soaked in water and squeezed)

2 Pearl Onions.

1 tsp Grated Ginger.

1 tbsp Coriander leaves.

1/2 tbsp Mint leaves.

1/2 tsp Garam masala.

1 tbsp Cornflour.

1 tsp Pepper powder.

1 tsp Chat masala.

Breadcrumbs for coating.

Salt to taste.

Oil for shallow fry.




METHOD.

Mix all the ingredients in a bowl except oil and chat masala. If ur breadslices then dip it into water, squeeze out excess water and mix well. Apply oil on ur palms and make small flattened round shaped and keep a side. Heat oil in a pan for shallow fry. Coat the tikki's  in breadcrumbs and shallow fry on both the sides or until u get a nice brown crust on both the sides. Serve hot with a sprinkle of chat masala on top.

FISH CHETTINAD


Thesedays I have become a very big fan of chettinad cuisine and have tried nearly 4 to 5 items fo far. Once I was in fish chettinad  hunt in google when I came across one blog named  ''SHARMIS PASSIONS'' where exactly the page I wanted. I followed her recipe the way she explained and the result was just delicious to satsify my taste buds. I thank her from the botton of my heart for sharing such yummy treat. TIPS :  Use coconut oil whenever u prepared recipe with fish. Its gives u a nice aroma. The flavour in coconut oil takes a simple dish to a new level.

BATATE SONG

Batate song is a spicy and sour potato curry very authentic and popular to konkani cuisine. Normally this curry when its served during wedding occasion, the colour is very very reddish and is extra spicy that kids most of the time avoid. Since I love spicy flavour, it suits me a lot. But when ur making at home, you can reduce the amount of heat according to ur likings.

Batate song can be prepared with or without coconut. I would say if ur going for sidedish, avoid adding coconut and if ur looking for gravy, for eg with idiappam, or with rice, then addition of coconut would be tasty. My version is with coconut and I had a nice combi with idiappam for dinner.





INGREDIENTS

2 Cups Boiled Potato.

1 Onion.

3/4 Cup Grated Coconut.

6 Red Chilly (Kashmiri chilly)

2 tsp Coriander seeds.

1/2 tsp Tamarind extract.

Salt to taste.

Water as needed.



METHOD. 

Heat 1 tsp oil in a pan. Add grated coconut, red chilly, coriander seeds and fry till coconut turns slight brown. Cool the mixture and grind into smooth paste adding tamarind extract plus adequate water. Keep it aside. Heat 1 tbsp oil in a another pan. Fry onion till they turn translucent. Then add the grounded masala with salt. Pour adequate amount of water and bring the gravy to boil. Add chopped potato and reduce the flame for 2 to 3 min covered with a lid. Stir again till the masala gets well combined with potato and the gravy turns thick. Serve hot with rice or idiyappam.

AVOCADO MILKSHAKE

Avocado is otherwise called as Indian butter fruit or makhanphal. Its is a good source of potassium, vitamin C, E and K. When you look upon health benefits, its very good for diabetes, arthritis, skin problems, weight loss and many more. It acts as an healthy ingredient on ur diet too. I have seen people using avocados in salads and dips but never tasted its drink.So for the first time, try ed making its milkshake which was not only refreshing but also rich and creamy in texture. My daughter just loved it :)



INGREDIENTS

1 Ripe Avocado

2 Cup Cold Milk or Almond milk.

1tbsp Sugar.

A drop of Vanilla essence.




METHOD.

Peel the avocado and cut in half. Discard the pit. Scoop the flesh and blend all the rest of the ingredients into blender until smooth and creamy. (Add or less the quantity of milk according to ur wish to make ur shake as thin or thick, depends on the size of ur fruit.)

Pour into ur serving glass :)

GRILLED SWEETPOTATO CUTLETS

''Cutlets'' are very popular, simple and easy snacks. This time, I had a twist adding sweet potatoes instead of normal potatoes which was much more healthier version. The taste was superb with a mix of sweet and also spicy. It can be had as a perfect starters for the parties or as a tea time snacks. Do try this -


INGREDIENTS

2 Boiled Sweet potato.

1/2 Cup Grated Carrots.

1 tsp Ginger paste.

1 tbsp Chopped Onions.

1 tsp Red chilly pd.

1/2 tsp Garam masala pd.

1/4 Cup Chopped Coriander leaves.

1 tsp Chopped Mint leaves.

1 Cup Bread crumbs.(appro)

Salt to taste.

Oil for shallow fry.


METHOD

Mash the boiled sweet potatoes.  Add all the ingredients except oil. For the binding purpose add 2 to 3 tbsp bread crumbs and mix thoroughly. Now divide the mixture equally. Make small balls and flatten it. Now toss each flatten cutlets into breadcrumbs and shallow fry them on a grilled pan or normal pan till golden brown or until done. Serve hot with a dip of green chutney.

BUTTER EGG MASALA

This is spicy curry with boiled eggs cooked in onion tomato gravy with blend of Indian spices. In this, the finishing touch of kasoori methi is the key element which ends up with an irresistible aroma and flavours. This culinary gem of north indian cuisine makes for a decent side dish with pilaf, paratha or naans. I served with plain roti's with spicy fish fry.


INGREDIENTS FOR GRINDING

1 Onions.

2 Tomatoes

4 Cloves of Garlic.

1 tsp Chopped Ginger.

3 to 4 Cashews.

Pinch of Khus khus.

Water as needed.

INGREDIENTS FOR GRAVY

2 Boiled Eggs

1 Chopped Onion.

2 tsp Kashmiri Chilly pd.

1/2 tsp Turmeric pd.

1 tbsp Garam masala.

1 tsp Cumin pd.

Pinch of Ajwain.

1 tbsp Crushed Kasoori methi

1 tbsp Heavy cream

1 tbsp Butter

1/2 tsp Oil.

Salt to taste.



METHOD.

Grind the items mentioned above adding adequate water. Slice the eggs and keep it aside.

Heat butter and oil together in a pan. Add onions and fry till it turns translucent. Then add the grinding mixture and fry till the raw smell disappears. Add all the powders and saute followed by ajwain. Then add adequate amount of water and bring to boil.  Reduce the flame and then add heavy cream and stir until the gravy becomes thick. Drop in sliced egg and garnish it with crushed kasoori methi or fresh coriander leaves.

Serve hot with naans, or chapatti.

BADAMI CHICKEN

Badami chicken are super delicious curry, absolute rich delight for chicken lovers and quick dish to prepare. The mint leaves and the rich badam paste enhances the flavour and aroma of this tasty curry. This serves as a tasty and filling side dish chappathi, naan, pulao or with a simple plain rice. Try out this recipe today :)



INGREDIENTS FOR MARINATING CHICKEN.

1/2 kg Chicken ( with bones)

2 tbsp Curd.

2 tsp Chilly pd.

1 tsp Turmeric pd.

Drop of vinegar.

Salt to taste.

INGREDIENTS FOR GRAVY.

15 Peeled Badams. (soak it in hot water for 15 min and peel)

1/4 Cup Milk or Fresh cream.

1 Big Onion.

1 Tomato.

2 tbsp Ginger Garlic paste or Freshly chopped.

Few Curry leaves.

2 Green chilly

1 Tbsp Red chilly pd.

2 tsp Cumin pd.

1 tbsp Garam masala.

Handful of Mint and coriander leaves. ( each half )

Salt and Pepper to taste.

2 tbsp Oil.



METHOD.

Clean the chicken and marinate with the ingredients given above for about 1 hour. Make a paste of badam with milk and keep it aside. Heat oil in a pan.  Fry Onions,curry leaves with ginger garlic paste until the raw smell gets off and onion turns into light brown. Add tomato, green chilly and saute well. When tomatoes are well mashed up, add red chilly, turmeric pd, cumin pd, garam masala , mint and coriander leaves with salt and pepper. Once all the ingredients are well mixed up with spices, add the marinated chicken. Close the lid and reduce the flames and allow the chicken to cook from its own juice. If u need gravy then add 1 cup of water and cook till the pieces is tender. Finally add the badam paste and boil for 2 min. Garnish with fresh coriander leaves and serve hot.

OMELET AND EGG MANCHURIAN

Manchurian'S are all time fav as I am very fond of chinese cuisine from my childhood days. It makes a perfect side dish with fried rice and noodles. This dish was prepared when I was craving to have eggs and at the same time with Manchurian type. So taught of coming to an idea of preparing an omelet and then mix in chinese sauce laden hot an sour gravy. Theres another recipe of boiled egg manchurian which I would like to share with u guys.



INGREDIENTS.

1 Diced Onion.

1 Diced Capsicums.

2 tbs Soya sauce.

2 tbs Tomato ketchup.

1 tbs Chilly sauce

1 tbs Chopped Ginger.

1 tbs Chopped Garlic.

1 1/2 tsp Corn flour.

3 tbs Water.

2 tbs Oil.

Salt to taste

INGREDIENTS FOR MAKING OMELET.

2 Eggs.

3 tbsp Chopped Onions.

1 tsp Grated Ginger.

2 tsp Milk.

Salt and Pepper to taste.

1 tsp Oil.

METHOD.

Break the eggs till frothy. Drop the rest of the ingredients except oil and mix well. Heat oil in a pan and egg mixture and swirl it around the pan. Cook on low flame till all the sides are well cooked. Slowly flip it over and cook on other side too. Slide the omelet on to the plate and allow to cool. Dice the omelet into required shapes and keep it aside.

Heat some oil in a pan. Add fresh ginger and garlic. Saute for few sec and then add onion, capsicum and salt to taste. Make sure the onions and capsicum are half cooked.

Now add soya sauce , ketchup and chilly sauce. Sprinkle some water and saute again for a while and bring to boil. At this stage add the mixture of corn flour in order to get thick gravy.

Lastly add the sliced omelet and bring to boil. Garnish with spring onion and serve.

EGG MANCHURIAN.

Add the boiled eggs into the Chinese gravy as mentioned above and serve hot with noodles or fried rice.

AMMBE SASAM

''AMMBE SASAM'' is extremely popular konkani recipe made with mangoes in coconut gravy with a touch of sweet and mild spicy flavour. Infact this dish is prepared in most of our konkani wedding. I make it every time whenever I get the fruit available. If mangoes are not available, then it can replaced by grapes or pineapple or desseed orange too. If ur looking for something new and different, do try this konkani sasam and make ur lunch tasty :) 



INGREDIENTS.

2 Ripe Fresh mangoes.

2 Cubes of Jaggery.( according to ur taste)

3/4 Cup Grated coconut.

2 Red chilli.

Pinch of turmeric powder.

Pinch of Salt.

FOR SEASONING.

1 tbsp Coconut oil.

1 tsp Mustard seeds.

1/2 tsp Jeera.

1 sprig of Curry leaves.



METHOD

Peel the mangoes and squeeze the whole fruit with hands till it forms into thick juicy and mushy. Drop it along with mango seed into the bowl. Meanwhile grind coconut with red chilli, turmeric pd and jaggery to a coarse paste adding very little water. Add the coconut mixture into mashed mangoes. Add salt according to ur taste. Heat 1 tbsp of coconut oil followed by mustard seeds, jeera and curry leaves. Add the tempering to the sasam. Serve.

MANGO SEMIYA PAYASAM


I love kheer specially when it comes with fruity and this is one of my fav which my family too adore, Its a simple, easy semiya or vermicelli payasam just as we make regularly at home, with a slight change of mixing mango pulp or freshly blended ripe sweet mango. Its awesome and a sure treat with mango lovers.


Follow the same procedure for making payasam or kheer written at the back side of  semiya packet. Just reduce the quantity of milk and instead add mango pulp and serve cool.

Garnish with dry fruits and serve chill.

ALMONDS DATES SHAKE

This is a Shake with a blend of almonds and dates which  is filling and nutritious. It is one of the healthy best

 choice for breakfast. Though dates has its natural sweetness, therez no need to add extra sugar. Kids will 

just surly adore and to make it more rich, thick and creamy, a scoop of ice cream can be added. That's 

optional.

 
INGREDIENTS

1/2 Cup cold milk.

1/2 Cup Hot milk.

Scoop of ice cream (optional)

4 to 5 Dates.(without seed)

5 Almonds.

METHOD

In a bowl of hot milk, soak almonds and dates for half an hour. This makes dates becomes extra soft. Later

 peel off almonds outer layer. Now drop all the ingredients plus the soaked milk into the blender. Blend on 

high until smooth and thick. Pour into the glass and garnish with roasted almonds or as a whole.

FRIED PEPPER CHICKEN

Its one of my fav starters. The unique thing and the one in this dish which I love the most is the crust of the chicken pieces, which is fryed first and then is mixed with spices under slow cooking tastes fabulous. And the bites in each pieces enhances the flavour of crushed black peppers is just out of the world. Its a real treat for all chicken lovers :)



INGREDIENTS FOR MARINATING CHICKEN.

1/2 Kg Chicken piece ( with bones).

1 tbsp Ginger Garlic paste.

2 tsp Red chilly pd.

1 tsp Vinegar or Lime juice.

3 tsp Oil.

Salt to taste.

INGREDIENTS FOR MASALA.

2 Onion.

1 Tomato.

1 tsp Fennel seeds.

1 tbsp Fresh ginger garlic chops.

Few curry leaves.

1 tsp Garam masala.

1 tsp Coriander pd.

1/2 tsp Cumin pd.

3 tsp Crushed Pepper pd.

2 tsp Oil.

Water little.

Salt to taste.


METHOD.

Marinate chicken piece with the above ingredients for about 1 hour. Heat oil in a pan. Drop the chicken marinate and fry on a high flame so that the pieces gets roasted well with a nice crust. Remove and keep it aside. In same pan, add extra oil. Add fennel seeds followed by onions, tomato,ginger, garlic, curry leaves and pepper pd and  saute till it gets cooked. Then add all the masala powder. When the masala gets well combined with onion tomato mixture, add the fried chicken pieces and stir under low flame. Add little water and cook covered with low flame. Stir well till the water gets absorbed. Garnish with coriander leaves and serve.

BEETS CARROT PANIYARAM WITH GREEN CHUTNEY

Kids prefer variety of colourful food specially when it comes from veggie and fruits. And I feel its the best way to get kids proper Nutrients and eating right. If their plates are bursting with fresh coloured goodness, they will usually demolish every mouthful. Here I have prepared 2 colourful paniyarams along with green chutney which smera loved a lot. She was so surprised to c this colourful platter soon after she came from school and was in hurry to have those.  Even I was very much satisfied to see her eat healthy food. Do try the same with ur kids too.



INGREDIENTS.

Idly batter.

Carrot grated.

Beetroot grated.

INGREDIENTS FOR GREEN CHUTNEY.

Bunch of Coriander leaves.

Half of Mint leaves.

1/4 Cup Coconut grated.

2 Cloves of Garlic.

1 tsp chopped Ginger.

1/4 Cup Sauteed Peanuts.

2 drops of Lime juice.

Salt to taste.

METHOD.

Divide the idly batter in which you have to mix grated carrots in one and beets in another. Prepare hot paniyarams and keep a side.

For chutney, blend everything into mixer for about 2 min adding little water in between.
Serve hot paniyarams with green chutney.

UNNIAPPAMS



Unniappams is the most popular dessert or snack in Kerala prepared from rice, jaggery and with ripe bananas. Its truly an  irresistibly sweet in the form of brown balls deep fried delight. Actually there are many types of preparing unniappams where some people make it with rice powder and other method with soaked rice which I prefer the most as it taste even much better. Some add wheat flour or maida into the batter which I have not prepared yet. The thing which I love the most is when I bite those coconut bits in it. Tastes heavenly.  Here is my version of preparing this mouthwatering snack.


INGREDIENTS.

1 cup Raw rice.

3/4  cup Jaggery syrup.

2 tsp Roasted Sesame seeds.

1 Ripe Banana.

Pinch of Cardamom pd.

Pinch of Soda.

Ghee fried Coconut Bites.

Oil or ghee for frying.


METHOD.

Wash and soak rice for 6 hours. Drain the water and grind to a smooth paste. Transfer them into a bowl. Then add rest of all ingredients except oil or ghee. Mix well and allow the batter to sit for about 30 min. The consistency of batter should not be very thick not thin, so adjust accordingly.

Heat paniyaram pan. Add enough oil or ghee. When it gets hot, fill the holes with the batter only up to 3/4. Now cover with a lid and reduce the flame. Once the bottom side starts browning, flip in over to the other side and allow to cook. Once cooked, remove and drain on a tissue. Repeat the same process with the rest of the batter.

NOTE :

Banana can be either grinded along with the batter or can just chop them into the batter as what I did. Using any of this process will make the dish tastes good.

Once I was in search of something new cheesy dish which is one fav ingredient of my daughter smera, to give her as snacks, when I came across this new delicious cheese sticks. When I saw its ingredients, I was very much happy as it was simple and ready at home. JACKFRUIT MILKSHAKE

My kiddo is very fond of milkshakes. I prepare different types with fruits which she loves to have it after her play time. One among them is the Jack fruit milkshake.  Only problem I have with the fruit is its smell. Don't know why, but I still hates its smell but on other side, I just love its flavour so much and u know guys, jack fruit ice cream from ''Naturals'' is my favourite ice creams of all ;) So guys do try this awesome drink. It is a great real treat for jack fruit lovers.



INGREDIENTS.

1 Cup Chilled Milk.

1/2 Cup Chopped Ripe Jack fruit.

Sugar or Honey as per taste.

Ice cubes. ( optional)

METHOD.

Blend Jack fruit with sugar first followed by milk for about 2 min.

Serve chill with piece of fresh jack fruit on top.

CHATPATAA WATERMELON

Watermelon are all time favourite fruit of mine.  Its nutritional content is fabulous and therefor plays an essential part of our diet. Watermelon's are excellent sourse of Vitamin A and C which helps strengthen immunity and many more. Now back to today's recipe, this is very simple and attractive delight with very less ingredients that kids would surly try to have that looks like a cute ping pong balls. :) Its filling and inviting. I just love to them after my light dinner. Do try this easy fruity chatpata dish :)


INGREDIENTS.

Watermelon scoops.

Lime juice.

Salt and Pepper to taste.

NOTE.

Watermelons have seeds throughout, so use caution to prevent choking.



METHOD.

Twist the scoop around the half of watermelon completely, cutting out a perfect ball.

Then season it with lime juice, salt and pepper .

Serve cool or insert those in a toothpick and serve.

WATERMELON RIND DOSA

Herez another one of my interesting recipe that I was waiting to post for long. Yes its ''WATERMELON RIND DOSA''.  I know its not attractive in looks but its tasty and awesome. What I like is, it does not need any fermentation also its very soft and light. While making this dosa, make sure you peel the green portion completely and use only the white portion of it. So next time when u buy watermelon, remember to make use of the whole fruit by not wasting the rind instead try making spongy watermelon rind dosa :) :)


INGREDIENTS.

1 Cup Rice.

3/4 Cup Watermelon rind portion.

1/4 Cup Coconut.

1/4 Cup Puffed rice.

2 Green chilly.

2 Tbsp Grated Ginger.

Few Curry leaves.

Salt.

Oil as per needed.



METHOD.

Peel the green part of the watermelon and chop the white portion of it. Soak rice in water for 2 hours. Meanwhile grind the watermelon rind along with coconut, green chilly, ginger and curry leaves. Transfer them into a bowl. Later grind the soaked rice and mix with the rind batter.  Add salt and mix well. The consistency of batter should be thick when compared with other dosa. Heat non stick pan. Pour a ladle full of batter on heated tawa.Spread the dosa into thick circle. Coo the dosa on both the sides applying oil if needed. Transfer them into a plate and serve hot with ur fav dip.

PLANTAIN OATS PANCAKE

Most of the time I used to end up my ripe plantain making halwa or fritters or just roasted plantain ghee fry. Then currently, I started making plantain pancakes for my little one as its the best healthy delicious snack. The addition of oats and wheat flour makes the dish nutritious and perfect.  She prefer this delight soon after coming from school and wont forget to appreciate its taste ;) She simply loves it.


INGREDIENTS

1 Ripe Plantain.

1 Egg.

1/2 Cup Oats.

1/4 Cup Maida or Wheat flour.

1 Cup or a bit less Milk.(depends on thickness)

1/2 tsp of Soda powder.

Sugar as per needed.

Pinch of Salt.

Butter.

Pinch of Vanilla essence.

METHOD

Peel plantain, slice and drop them into the blender followed by the rest of the ingredients.

Bled for a min and transfer them into a bowl. Leave the mixture for about half an hour.

Heat 1 tsp of butter on a griddle. Once the butter is hot, pour the batter into pancakes shapes.

Cook until the top layer looks fairly dry with little bubbles on it. Flip and cook on other side.

Serve hot on plate with dollop of butter or honey :)

PINEAPPLE HALWA - 200th POST.

Hai all,

Happy to make my 200th post. I am really so excited and happy to share with u all my moment of joy. My heartfelt and sincere thanks to my family, my relatives, blogger friends and to my facebook friends who has supported me alot with their positive feedback. With appreciation and comments from all you guys, I could possibility continue my blogging world till today. Once again a big Thanks to all for your love and support.

On this pleasant day, I wanted to prepare some sweet dish, something out of my fav fruit ''PINEAPPLE'' and thats '' PINEAPPLE HALWA''. Very simple, lip smacking  recipe with limited ingredients. Its the blend of pineapple puree mixed up with khoya. Too much of a good thing can be delicious, you will discover when u have a bite of yummy halwa along with the nuts and kismish.


INGREDIENTS.

2 Cups Pineapple puree.

3/4  Cup Sugar. ( Depending on the sweetness of pineapple, u can adjust the amount of sugar)

1/2 Cup Ghee.

1/2 Cup Khoya.

Yellow colour, ( Optional )

Dry fruits as per needed. ( I use almonds and kishmis)

METHOD.

Heat 3 tbsp of ghee in a pan. Drop in pineapple puree and fry on medium heat for 10 min. Add sugar, khoya and stir well making sure it does not stick to the bottom of the pan. When sugar is well mixed, add remaining ghee and stir continuously well on medium heat until the halwa starts to leave the sides of the pan. Transfer the halwa on a greased plate and decor with ur fav dry fruits. Serve hot :)

CREAMY PUMPKIN SOUP

A delicious soupy combination of carrots, onion and pumpkin. Its a soup flavoured with a touch of garlic and served garnished with heavy cream. Yet nutritious, healthy and refreshing soup.



INGREDIENTS.

1 Cup Pumpkin pieces.

1/4 Cup Carrots.

1 Small Onion.

1 Cloves of Garlic.

1 Reduced Milk.

1 tsp Butter.

Water or Vegetable stock as needed.

Salt and Pepper as per taste.

METHOD.

Heat butter in a pan. Add garlic, onions, pumpkin and carrots and saute. Add required quantity of water or stock into it. Cover and cook till all the ingredients becomes tender. Blend them and again pour into another pan. Add milk and allow the mixture to boil. Season with salt and pepper. Add a spoon of heavy cream and serve hot hot. :)

BANANA MILKSHAKE WITH WATERMELON TOPPING

Banana milkshakes are just perfect for breakfast and are very good source of calcium which is an important component in day today's healthy diet. Its filling, nutritious and comforting when therez an attractive handmade watermelon's cup topped on. Looks very inviting for kids and a simple way to have 2 fruits one at a time :) My hubby helped me alot making this creative  watermelon cups :)


INGREDIENTS.

1 Ripe Banana.

1 1/2 Cup Chilled Milk.

1/2 tsp Butter.

Sugar as needed.



METHOD.

Skin and grind bananas for a min . Then add milk, sugar and butter and blend everything into mixer for 2 min

Top them with watermelon cups and serve chill.

GARLIC CHICKEN LOLLYPOPS

It is a simple dry preparation of chicken sauteed in hot and spicy tomato sauce and deep fried. It makes a wonderful tasty starters for get to gather parties. Also tastes great with noodles and fried rice. Here either fried lollipops with tomato dip can be used or u can just mix the whole dip along with  fried lollipops. Both options taste good.



INGREDIENTS FOR MARINATING LOLLIPOPS.

4 Big Chicken Lollipops.

1 tsp Ginger Garlic paste.

1 tsp Soy sauce.

1 tsp Green chilly Paste.

1 Egg.

1/4 Maida.

Red Colour (optional)

Salt and Pepper to taste.

Oil for deep fry.

METHOD.

Marinate chicken lollipops in the above given paste except egg and maida for at least 1 hour. In a bowl, beat egg with salt and pepper and keep it aside. Spread maida on plate.  Now take each marinated lollipops and roll on maida and then dip it into egg mixture and again roll it in maida. Repeat the same procedure with rest of the lollipops. Heat oil in a pan and deep fry them until it turns golden brown.


INGREDIENTS FOR HOT AND SPICY TOMATO SAUCE.

10 Pods of Garlic.

1/2 Cup Tomato ketchup ( i used hot and spicy one )

2 tsp Red Chilly pd.

1 tsp Vinegar.

1 tbsp Butter.

METHOD.

Heat butter. Add garlic pods and fry. Then add chilly pd, tomato sauce and vinegar and bring them to boil. You can serve the sauce with lollipops or u can mix the lollipops with the sauce in pan. Serve hot.

BREAD TOFU PIZZA

Bread pizza's might be one of the best snacks for kids on behalf of real pizza's. Easy to prepare with different healthy toppings, The topping I have used is yellow, red and green bell peppers with tofu. Tofu is a food made by coagulating soy milk that are protein rich and is a popular substitute for meat or diary in a variety of dishes. I know most of the people specially kids hates tofu because of its unique smell and weird texture. But once in while can be used when you think of its nutritious value. Its filling and inviting for kiddo's when tofu is mixed up with other veggies along with a  mild spices. It can be served with a glass of fruit juices.



INGREDIENTS.

2 Wheat Bread slice.

1 Small Onion.

2 Cloves of Garlic.

1/2 Cup bell peppers ( red, yellow and green).

1/4 Cup Diced Tofu.

1 tbsp Magic Masala pd or Garam masala.

1/4 tsp Cumin pd.

Cheese as per needed.

Salt and pepper to taste.

Butter as per needed.

Tomato sauce ( Optional )




METHOD.

In a pan, heat butter. Add garlic and onion with salt and saute till its half fried. Add the veggies and tofu and fry them until its soft. Then add the magic masala or garam masala pd , cumin pd and fry for another 1 min. Remove from heat.

Now spread tomato sauce or butter on each bread slice and place the veggie mixture on the top. Top up with grated cheese and bake or micro for 2 min or cook till the cheese melts.
