CHILLY FRITTERS

Bhajji molaga nothing but chilly fritters is the most popular snack in Tamil nadu. I love spicy food so no doubt, it comes under the list of my favourites. Once when I was shopping, my eyes stared upon green shining chillies. Not in a second I packed those thinking it would be a perfect snack on sundays on a rainy season. Waa hot hot 'Bhajji Molaga'' on a rainy day. Sounds great right?
And guys one interesting tip to share. ie if the deseeded chillies are being soaked in vinegar water, its helps reduce its heat. And later we could taste a slight tangy flavour of vinegar which really tastes delicious. That really helps to do so. So whenever you try making chilli fritters, do try using this method.


INGREDIENTS.

10 Chillies.

1 1/2 Cup Besan.

2 tbsp Chilli powder.

Pinch of Soda.

Pinch of Hing.

1 tbsp Vinegar.

Water as per needed.

Salt to taste.

Oil for frying.

METHOD.

Make a long slit from top to bottom on each chilli. With the help of spoon remove few or all seeds to reduce the hot. ( I don't take them full ). Now in a water add vinegar and soak the deseeded chili for half an hour. Later drain them on a tissue paper separately.


Meanwhile prepare the besan batter adding enough water with salt, chilli powder,hing and soda.
The consistency should not be either thick nor thin.

Heat oil in a kadai. Dip each chilli into the batter and gently put them into oil. Fry for 2 to 3 min turning occasionally till golden brown.

STUFFED MASALA OMELET

Anything with egg is my favourite. So one day with a idea of my hubby, tried making an omelet with simple stuffing. Stuffing can be of any type. Its upon to you. It can be like adding veggies or with addition of cooked meat or with the combo of mushroom and corns with a touch of Indian spice or with any Italian ingredients. Also adding cheese, will be perfect for kids. It gives a creamy texture. Anything, any combo will taste good with egg. Here I just ended up sauteing veggie with simple salt and pepper. I make this for dinner whenever we feel like having simple, easy and quick khana. Its light, filling and super duper in taste. Do try this awesome recipe.


INGREDIENTS.

2 Eggs.

2 tsp Milk.

1 Chopped Onions.

4 tbsp Chopped Capsicum.

4 tbsp Grated Carrots.

1/4 Cup Frozen Peas.

1 tsp Butter.

Salt and Pepper to taste.

METHOD.

Heat butter in a kadai. Add onions, capsicum, carrots, peas with salt and saute till its half cooked. Add pepper finally. Keep it a side.


In a mixing bowl, beat both the eggs and milk together with a fork. Add salt to taste.

Later place a skillet on flame. Add butter and pour in the egg mixture and spread them evenly.

Let it cook under low flame. Sprinkle extra pepper if needed. Loosen omelet edges with a help of a spatula. Later place 2 to 3 spoonful of stuffing on one side and cover the masala with other side of omelet.


Place them carefully on a plate and serve hot hot.

CUSTARD FRUIT WITH JELLY TOPPINGS

Herez the colourful attractive recipe which most of the kids will adore a lot. Not even kids but also adults, aged people would surly love to have it. Because its rich nutritious with mixture of fruits, dry fruits and a creamy texture of flavoured custard. No doubt you would surly fallen in love with it :) My hubby too helped making this dish very special. He did strawberry jellies from instant mix [my kiddo's favourites] and helped me cutting fruits :). We tried adding Parle G biscuits too just to give nice chewy bite. Its optional whether to use it or not. One more option is to add simple sponge cake in between and that gives you a nice texture and also deli sh. Yummmmmmmm
So do try this awesome heavenly dessert and make your day feel relax. Theres no particular measurements for this. You can add any types of fruits which u love to have.



INGREDIENTS.

Flavoured Custard [ I used mango flavour ]

Jelly [ Strawberry Instant mix ]

Fruits [ I used mango, apple, banana ]

Dry fruits.

2 to 3 Parle G biscuit. [ Optional ]


METHOD.

According to instruction given, follow the procedure to make the custard and jelly mixture. Cool them and let custard sit in fridge for 1 hour nearly and jelly into the freezer.

Chop up all the fruits and dry fruits.

Now the fun part comes. In a serving bowl place the biscuits evenly. Drop in the fruits and then the custard and finally the jelly pieces. Arrange alternate layers of these. At last top it with dry fruits and some of ur favourites fruits. Refrigerate them and serve coooooool.

MILK HALWA

It is said that, food is incomplete without sweets. But on my side, sweets are prepared very rarly. I am not a huge fan of sweets but somtimes when I feel having it I go for dairy products a lot like peda, palkovaa, or simplly would like to have a spoon of condensed milk :) I hope there are lots who love to have it. I had one container of condensed milk in my fridge. Had some of them as it is and I remember once I had a glance reading the procedure of making halwa using condensed milk in some book. I tried and beleive me guys, it was awesome, sinful and soo delicious. Its quick and easy and in no time milk halwa is ready.


INGREDIENTS.

1 Cup Condensed Milk.

2 tsp Yogurt.

1 tsp Sugar. [ Optional ]

1 tsp Ghee.

Raisins for garnish or any other nuts.

METHOD.

In a pan, add ghee. Pour the condensed milk and yogurt together. Stir cont for 5 min under low flame. Makesure no lumps are formed.
Stir them well till it becomes to a halwa consistancy. It takes nearly 6 to 8 min.
Tranfer them on a greased plate. Cut them as per ur choice.


Garnish with raisins and serve.
