AAM KA PANNA

Aam ka panna is one of the famous refreshment drink in North India. I would say its a royal drink which I would prefer every day. Its the salty, sweet and tangy tasted drink perfect during hot hot sunny days. Its the first time I tasted when my aunt prepared when I visited her place. The taste was soo fabulous and extraordinary. Then I came to know she added a special ingredient ''Jaggery'' for sweet flavour and jaggery contains the goodness of vitamins and minerals which is very essential for our body. And adding Jaggery instead of sugar is much more healthier. Its true.

When I did at my home, I added some handful of mint leaves which doubled the taste. It just brings out the freshness flavour and is royal in taste.Here I have added both jaggery and sugar. It was because my mangoes were soo sour and to adjust its taste accordingly, I added sugar. You can add extra or less depends upon ur choice.


INGREDIENTS.

1 Large Raw Mango.

1/2 Cup Grated Jaggery.

1/4 Cup Sugar.

1 tsp Dry Roasted Cumin Powder.

1/2 tsp Black salt or Kala Namak.

1 1/2 Cup Water.

Handful of Mint leaves.

Pinch of Black Pepper.

METHOD.

Wash mangoes and cut of its outer skin. Cut them into chunks excluding mango seed and place them in pressure cooker with 1 cup of water. Under full pressure cook the mangoes for 5 min. Allow them to cool.
Later grind them in mixer with remaining water, jaggery, sugar and mint leaves. Add cumin pd, black salt and pepper and grind them again for few sec.
Place them in fridge.
Strain and then serve with a topping of fresh mint leaves.

SLEEPLESS NIGHT FOR MANGALORIANS.

SHORT NOTE:

May 22nd will be one of the most unforgettable day for mangalore people, specially to those who had lost their loved once in the tragic plane crash at mangalore airport. May god shower them with more strength and courage to face this unexpected situation happend in their life.

My heart felt condolences to their family. I have nothing more to say but to remain in silence and pray god for their soul to rest in peace.

I am deeply touched :(

TARLA DALAL'S TOMATO CHUTNEY

I am a huge fan of Tarla Dalal. Almost all her recipe are simple with seleted ingredients which are mostly available at home and can be prepared at the time of hunting her recipe. I was feeling very lazy to prepare dinner sterday and wanted to have somthing different one. In such cases I mostly end up making Dosa or Idlies for dinner :) Thus I was browsing her recipe for quick and easy sidedish when I got her tomato chutney that I have never prepare before. The only change I did is instead of adding green chilli, I added dried red chilli for chuntney. It came out too good.



INGREDIENTS.


1 Onions.


1 Tomato.


2 Dried Red chilli.


1/2 tsp Channa dal.


1/2 tsp Urad dal.


8 to 10 Curry leaves.


1/4 tsp Turmeric powder.


1 tsp Oil.


Salt to taste.


METHOD.


Heat oil in pan. Add channa dal, urad dal , red chilli and curry leaves and saute for few sec.


Add onions and fry them till it becomes traslucent. Then drop in tomato, turmeric and salt and saute. Allow them to cool.


Later grind them in mixer with few limited amout of water.


Serve with dosa or idlies.

LAYERED FISH BIRIYANI

I am crazy of fish and anything with fish is my favourite. It might be in form of fried one or gravy or with rice type. One among them is the fish biriyani the layered method that I love the most. [ie alternate layers of rice and fish masala.] I would like to prefer such pot meal specially on weekends where I could have it in relaxing mood with my plate full :) I would just say its a classic recipe that I would bet you all will just fall in love with this taste. The fish I have used here is Salmon. Here I marinated fish with simple ingredients then fried because I wanted to give them a golden crust before I add them with the spiced gravy. To make them more attractive I garnished with fried cashews and fried onions. It was heavently guys. Do share this recipe and let me know the result.



INGREDIENTS FOR MARINATING FISH.

10 Pieces of Salmon or Tilapia fillets.

2 tbps Chilli powder.

1 tsp Turmeric powder.

Pinch of Hing.

1 tbsp Ginger Garlic Paste.

Salt to taste.

Oil for shallow fry.

METHOD.

In a bowl, mix all the above items except oil and apply to the fish . Let it sit for 10 to 15 min.
Heat oil in a pan and shallow fry them till it gets a nice crust.
Keep it aside.


INGREDIENTS FOR MAKING RICE.

1 Cup Basmati rice.

1 tbsp Ghee.

Whole Garam masala as per needed.

Salt to taste.

1 3/4 Water.

METHOD.

Soak rice in water for about 15 min. In a pressure cooker, add ghee. Fry the soaked basmati rice.
Add water,whole garam masala , salt and water and cook till the rice is done. Keep it aside.

INGREDIENTS FOR MASALA.

1 Onions.

1 Tomato.

1 tbsp Ginger Garlic paste.

1 tsp Chilli powder.

1/2 tspTurmeric powder.

2 Green chilli.

1 Bay leaf.

1 tsp Garam Masala.

2 tsp Fish masala.

Handful of Coriander leaves.

1/4 Cup Grinded Cashew nut.

1 tsp Lime juice.

1 tbsp Oil.

Salt and Pepper to taste.

METHOD.

Heat oil in a pan. Add Bay leave and stir for a sec. Then add the onion and ginger garlic paste and saute till its raw smells disappers. The add the chilli pd, turmeric pd, garam masala, fish masala one by one. Mix in the diced tomato and saute till it becomes mushy. Add grinded cashnewnut paste and coriander leaves and saute. Finally mix in the fried fish pieces adding very little water along with salt and pepper. Cover with a lid and allow to cook for another 2 min. Remove from flame and keep it aside.

Now the fun part comes :)

In a serving dish, arrange alternate layers of fish masala and rice. Make sure you end up with layer of rice finally. Garnish with fryed onions and cashews with a drizzle of lime juice on top.

Serve hot with ur fav raita.

SEV PURI

Next to my uncle's recipe comes my aunt's tempting dish. Being in mumbai and not tasting chaat? yeh tho ho hi nahi saktha. Yes its the Sev puri one of my fav chaat. We had extra leftover 'Potato Masala' the previous day which my uncle prepared for touched dosa. Thus she utilised that masala for the sev puri that resulted into one delicious tasty chaat. It include the taste of spicy from attractive 'Green Coriander Chutney' whereas the taste of sweet and sour from 'Sweet Chutney'. There is no particular measurement for the amount of ingredients used. Also can add extra veggies like chopped tomato, carrots or cucumber as toppings. Healthy and delicious chaat.




INGREDIENTS.

Readymade Puri.

Mashed Potato.

Chopped Onions.

Green chutney.

Sweet chutney ( Ready made).

Chopped Cilantro.

Sev.

METHOD.

Place puri's on the plate. Top them with mashed potato, chopped onions, both the chutney's, sev and lastly with cilantro.

Ready to serve.

MASALA TOUCHED DOSA ( UNCLE'S RECIPE)

Hey guys...Finally am back. Hope all are doing good and enjoying ur holidays to fullest.. Me too had a great blast with my family members so do smera had a nice time. I would definitely like to reveal that on my 'B DAY' my uncle who is very good cook prepared breakfast. What would be more special when my uncle cooks on my b day? Am I right? The recipe was ''MASALA TOUCHED DOSA'' a kinda different from normal masala dosa. Its my uncle's own version without adding onions and the main interesting part was the stuffing that is placed like a thin layer on dosa, not like the usual one. Hope now U would have known why I suggested the word ''Touched' :) and thus its not so heavy but simple and light breakfast which I always love to prefer. Coming back to ingredients, the measurement I have specified is apporoximate amounts as you can put more or less depending on what you like.



INGREDIENTS.

Dosa Batter.

2 Boiled Potatoes. (Mashed)

1 tbsp Ural Dal.

1 tsp Mustard seeds.

2 Green chillies.

1 tsp Oil.

Handful of Coriander leaves.

Salt to taste.

METHOD.

For stuffing -

Heat oil in a kadai. Add mustard seeds. When they start splutter add ural dal and fry till it turned brown. Add potatos , salt and lastly coriander leaves. Saute well till the leaves are well mixed with the potato masala. Cover with a lid and let it sit for 5 min under low flame.


For masala dosa -

Spread the thin layered dosa batter on dosa tawa. Add oil around dosa edges. Let it cook under medium heat. Now place the stuffing on to one side of dosa and spread them fully as a thin layer. Cook till its crisp and carfully fold them according to ur choice and place then on the plate with the help of a spatula.


Serve hot with sambar and chutney.

I was very glad to meet one of my best blogger and adorable pal ''APARNA FROM APS KITCHEN''. Surprisingly now she is residing just near to our home. So no way v could not meet each other.
