PINEAPPLE MENASKA

Pineapples is undoubtedly my fav fruit. This is one of my unique dish I have ever tasted. 'Pineapple menaska'  its one of the simplest and flavourful dish with the combination of spicy, sweet and tangy in taste. I have also noticed that in karnataka, it is served during  family get together or at wedding ceremony too. U must be all waiting for the ingredients so heres it is



INGREDIENTS

1 cup Cubed pineapple pieces.

1/4 Cup Coconut grated.

3 Cube of Jaggery. Or as per ur sweetness.

4 Kashmiri red chillies.

1/2 tsp Coriander seeds.

2 tsp Urad dal.

1/2 tsp Sesame seeds.

1 tsp Tamarind extract.

1 tsp Oil.

Salt to taste.

Water as needed.

FOR SEASONING.

1 tbsp Oil.

1 tsp Mustard seeds.

Few curry leaves.

METHOD.

Heat 1 tsp oil of pan. Roast red chilly, sesame seeds, urad dal and coriander seeds separately and grind all together with grated coconut and keep it side.

Boil chopped pineapple pieces with salt and water. When it gets cooked up, add the grounded masala and jaggery and make it a boil adding tamarind extract too. Add water according to ur consistency. Remove and serve them into a bowl. Season them with mustard and curry leaves
on top and serve hot hot.

WHOLE WHEAT LADOO

Wheat flour ladoo or Churma ladoo is a simple and popular traditional Maharasttian recipe. Its very easy and healthy for kids as I have added jaggery instead of sugar. Its the first time I tried these laddoo using whole wheat instead of ready made flour which turned out yum and were gone in a day :) So guys, go head and give this a shot for sure.


INGREDIENTS

1 Cup Powdered Atta.

1/2 Cup Grated Coconut.

3 Cube of Grated Jaggery.

1/4 Cup Chopped Dry fruits.

Ghee as needed.

Pinch of elachi pd.


METHOD.

Dry roast whole wheat and powder them. Heat a pan. Add 1 tsp of ghee and fry the chopped nuts till they turn crispy. Mix coconut and jaggery together and keep it aside.  Now in a big bowl, drop the powdered atta and add coconut jaggery mixture, crispy nuts , cardamom pd and a tbsp of ghee. Mix it well. No need to add water because there will be moisture in coconut jaggery mix. If its more, then adjust adding atta powder into it. Make round stiff balls.

GRILLED PANEER TIKKA

Paneer tikka are very popular North Indian snack served along with mint chutney. It tastes fab when paneer are cooked in tandoor. We can feel the smoky flavour on our each bite. Hence I don't have tandoor nor the oven I taught of making it on my grilled pan :) Here the chunks of paneer and the veggies are marinated into the spicy masala and then it is grilled with a sprinkle of chaat masala. Sounds heavenly right? ;)

This is the fantastic and a wonderful recipe where both adults and kids just adore. Instead of paneer same preparation can be done with Mushrooms, Gobi and even Potaotes..

 Do try this :)


INGREDIENTS

500 Grams Paneer.

1 Big Capsicum.

1 Onion.

Small Tomato.

Oil.

FOR MARINATION.

1/2 Cup Hung Curd.

1 Tbsp Ginger Garlic paste.

1/2 tsp Red chilly pd.

1/4 tsp Turmeric pd.

1/2 tsp Tandoori Masala.

Pinch of Red colour (optional)

1 tsp Lime juice.

Salt to taste.

METHOD

In a bowl add all the marinated items and mix well. Cut paneer into medium square shape with half inch thickness. Same wise cut onion, tomato and capsicum too. Now drop them into the marinated bowl and allow them to sit at least for half an hour.Skewer the paneer and the veggies or in a toothpick and arrange them on plate.
Heat a grilled pan. Pour oil and place each skewer carefully. Flip it on the other side and allow them to roast.
Remove once done.

Sprinkle with chaat masala and serve.
