BANANA FLOWER SUKKE ( THORAN )

'Bowndi' is what we call in Konkani. Its one of my favourite vegge but, I prepare rarly at home and the main reason is I hate chopping them which I feel its a hectic job. But here, thanks to my MIL who did for me. I have heard one tips for removing its bitterness is to soak them in the buttermilk. But according to me, this process may result in loosing all nutrients. So I dont prefer those. I just love its flavour a lot. And why not, this banana flower tastes great in any form. My mom makes cutlets out of them which is just incredible in taste. Will try out and will come up with the recipe soon. :)


INGREDIENTS

1 Banana flower.

1 tbsp Urad dal.

1/4 Cup Grated Coconut.

1/2 tsp Turmeric powder.

1 tsp Chilli powder.

1 Green chilli.

1 tsp Mustard seeds.

1 tsp Oil.

Salt to taste.

METHOD.

Remove the outter petals until you get a edible portion. Chop them finely after picking out the sticks and the transparent petals from them. Wash them into water and keep it aside.

Heat the oil in a pan and splutter mustard seends. Add ural dal and stir till it becomes brown. Later add green chilli , the chopped banan flower and salt with some adequate water to cook.


Bring them to boil and simmer for few min till its cooked. Meantime in a bowl, mix the grated coconut with turmeric and chilli powder and keep it aside.

When the banana flower is well cooked, add the coconut mixture and saute them until its completly dry.

Remove and serve hot.

DIWALI TREATS

Diwali is the festival of lights that we all celebrate in grand manner with our loved ones. Me too had a nice time with them and also with our society members when all decided to celebrate Laxmi pooja in the evening. I decided to prepare somthing simple dessert that does not take much time but must tastes delicious and also must be somthing that I have not done before. So started browsing net, when I came up with a dessert which was just perfect to my expectation. That was ''COCONUT LADOO'' which was soo simple and easy to make with a very less ingredients that just takes 10 min to get ready. It was soo cute on its own look and what I specially liked was the flavour of coconut was dam delicious as those were coated with coconut flakes. I garished them with my kiddo's choco snacks because I did not had dry fruits that time and that was the one my daughter was soo attracted towards the coconut laddoos :) . Have a look at my cuties over here :)


INGREDIENTS.

2 Cups Desiccated Coconuts.

1 Cup Milkmade.

Pinch of Cardomom Pd (optional).

METHOD.

Heat a non stick pan and combine all the above ingredients and stir for 5 min under low flame.

Remove them and allow to rest for a while. Shape them into small laddoos.

Roll them in the remaining desiccated coconut and arrange them on a a plate.


This was my ''Diwali Thali''. Its the ''Coconut laddos'', ''Aam ras'' , ''Sweet aval'' and ''Pineapple Rava jamuns''. Other is the ''Pista rolls'' we bought from sweet store. Lastly had fun sharing sweets with our loving neighbours. Have a look

RAGI IDLI WITH CORIANDER CHUTNEY

This is simple and elegant breakfast that I rarely do it on sunday's. I was very much interested to make ragi idlies and I tried this from ''RAMYA'S BLOG''. Her pictures were just enough to push me into making this and also somthing different from the normal ones. I followed her quantity of ingredients exactly as she described without changing anything. It was too good. Thanks ramya for the fabulous healthy idli.


Chutneys are always quick to prepare and does not need much ingredients. 'Coriander chutney' is one of my favourites of all and goes well with dosa and idlies. This chutney can be prepared in matter of minutes. The most I love in this chutney is the dark colour and appealing. Also the freshness of mint leaves with a mild flavour of garlic makes this chutney fabulous.


INGREDIENTS.

1 Bunch of Coriander leaves.

1/2 Cup Mint leaves.

1 Small Tomato.

3 pods of Garlic.

2 tsp Chopped Ginger.

2 Green chillies.

1/4 Cup Grated Coconut.

1 tsp Oil.

Salt to taste.

METHOD

Heat some oil in a pan. When it gets slight warm add garlic and ginger. Fry them its raw flavour disappers. Then add green chillies and tomato. Saute them for a while. Then add coconut and finally the mint and coriander leaves with a pinch of salt. Allow the mixture to cool. Put everything in the blender and blend them smoothly. Add water if required. Transfer them into the bowl. Serve with ragi idlies.

BAKED TILAPIA

Having fish fry with lunch or dinner is a comfort meal for me. Its the fabulous snack that I can have at any time. There are couple of varieties of preparation, but I like to try with one simple normal masala frequently. The fish I have used is Tilapia but its equally good with Pomfret and shrimps also.


INGREDIENTS

1 Tilapia fish.

3 tsp Chilli powder.

1 tsp Turmeric powder.

1/2 tsp Hing.

1 tsp Crushed pepper.

2 tbsp Coconut oil.

2 tbsp Lemon juice.

Salt to taste.

METHOD.

Clean the fish and score it by making cuts an inch or more. Wash and pat it dry with tissue.

Season fish with salt and lemon juice and allow to rest for 5 min.


Meanwhile, in a bowl, mix rest all the above ingredients.


Marinate with masala both inside and outside of the fish and allow to rest for half an hour.


Bake it in an pre heated oven for 15 to 20 min or till its done. Fish should flake easily with a fork when its done.
