LAUKI HALWA

Lauki Halwa is the classic dessert in mangalore. I first tasted this dish on my brother's marriage. His marriage was in mangalore so, lucky me, got a chance to taste this delicious treat. Last week I was soo craving to have this halwa after many years. So digged in to make my first trial which got ended up into yummy and mouthwatering halwa. It was dam tasty and I could not stop having it so do my hubby. Whenever I prepare sweets, I really do miss my brother because his favourites item was any kind of sweets. In short hez a sweet lover I must say. So this lauki halwa post I am dedicating to my loving brother 'Sujeeth'. [This is for you yeah :) When you visit mangalore, I am gonna make this for you for sure.]


INGREDIENTS.

1 Grated Lauki.

1/4 cup Milk.

1 cup Grated Jaggery.

1/4 cup Ghee.

Pinch of powdered Cardamom.

Roasted Cashewnuts.


METHOD.

In a pan add 2 tbsp ghee. Add the grated lauki and fry for few sec. Add the milk and stir till the lauki is well cooked. When the mixture is lumpy, add jaggery and stir under medium heat till it melts. Cook till most of the moisture evaporates from halwa. Lastly add the rest of the ghee and fry till the mixture turns fried brown colour. Once this is done, add cardamom powder to the halwa and mix well. Remove from the heat at the right consistency and add to a ghee greased bowl. Garnish with roasted cashenews.

Suma this is cald Kahi Halwa in mlore.....but we add sugar instead of jaggery...luks temoting those cashew nuts luk so crunchy
