UNNIAPPAMS



Unniappams is the most popular dessert or snack in Kerala prepared from rice, jaggery and with ripe bananas. Its truly an  irresistibly sweet in the form of brown balls deep fried delight. Actually there are many types of preparing unniappams where some people make it with rice powder and other method with soaked rice which I prefer the most as it taste even much better. Some add wheat flour or maida into the batter which I have not prepared yet. The thing which I love the most is when I bite those coconut bits in it. Tastes heavenly.  Here is my version of preparing this mouthwatering snack.


INGREDIENTS.

1 cup Raw rice.

3/4  cup Jaggery syrup.

2 tsp Roasted Sesame seeds.

1 Ripe Banana.

Pinch of Cardamom pd.

Pinch of Soda.

Ghee fried Coconut Bites.

Oil or ghee for frying.


METHOD.

Wash and soak rice for 6 hours. Drain the water and grind to a smooth paste. Transfer them into a bowl. Then add rest of all ingredients except oil or ghee. Mix well and allow the batter to sit for about 30 min. The consistency of batter should not be very thick not thin, so adjust accordingly.

Heat paniyaram pan. Add enough oil or ghee. When it gets hot, fill the holes with the batter only up to 3/4. Now cover with a lid and reduce the flame. Once the bottom side starts browning, flip in over to the other side and allow to cook. Once cooked, remove and drain on a tissue. Repeat the same process with the rest of the batter.

NOTE :

Banana can be either grinded along with the batter or can just chop them into the batter as what I did. Using any of this process will make the dish tastes good.
