FRIED PEPPER CHICKEN

Its one of my fav starters. The unique thing and the one in this dish which I love the most is the crust of the chicken pieces, which is fryed first and then is mixed with spices under slow cooking tastes fabulous. And the bites in each pieces enhances the flavour of crushed black peppers is just out of the world. Its a real treat for all chicken lovers :)



INGREDIENTS FOR MARINATING CHICKEN.

1/2 Kg Chicken piece ( with bones).

1 tbsp Ginger Garlic paste.

2 tsp Red chilly pd.

1 tsp Vinegar or Lime juice.

3 tsp Oil.

Salt to taste.

INGREDIENTS FOR MASALA.

2 Onion.

1 Tomato.

1 tsp Fennel seeds.

1 tbsp Fresh ginger garlic chops.

Few curry leaves.

1 tsp Garam masala.

1 tsp Coriander pd.

1/2 tsp Cumin pd.

3 tsp Crushed Pepper pd.

2 tsp Oil.

Water little.

Salt to taste.


METHOD.

Marinate chicken piece with the above ingredients for about 1 hour. Heat oil in a pan. Drop the chicken marinate and fry on a high flame so that the pieces gets roasted well with a nice crust. Remove and keep it aside. In same pan, add extra oil. Add fennel seeds followed by onions, tomato,ginger, garlic, curry leaves and pepper pd and  saute till it gets cooked. Then add all the masala powder. When the masala gets well combined with onion tomato mixture, add the fried chicken pieces and stir under low flame. Add little water and cook covered with low flame. Stir well till the water gets absorbed. Garnish with coriander leaves and serve.
