THAI RED SHRIMP CURRY

''Thai red curry'' is the one that we order whenever we visit our favourite thai cuisine restaurant. The one we offen visit when we were in US. I really miss those days :( . But currently I came across one Indian stores were I was just surprised to notice thai red curry paste here at mangalore. In no time I just grabed those and that night we had delicious red curry with hot hot steamed rice that tastes the same we had at US. The real flavour comes out when therez addition of fresh basil leaves and mainly the flavour of shrimps which I love the most. Veggie lovers can avoid adding non veg items.



INGREDIENTS.


1 Onion.


1 Capsicum.


1/4 Cup Red Bellpeppers.


2 tbsp Thai Red curry paste.


1 tbsp Fish sauce.


1 tbsp Soy sauce.


1 Cup Coconut milk.


3 Cloves of Garlic.


4 to 5 Leaves of Fresh Basil.


6 to 7 Shrimps.


1 tbsp Butter.


Salt to taste.


METHOD.


Heat butter in a pan. Add fresh garlic, onions and capsicum with a pinch of salt. Make sure the veggies are half fried. Add the red curry paste and saute for a while. Then followed by the soy sause, fish sause with adequate amount of water. Add shrimps and bring water to boil. Switch off the flame and add coconut milk and fresh chopped basil leaves. [Make sure not to boil after adding coconut milk.]


Serve hot with steamed rice.

My hubby is a huge fan of thai curries... I dont make thai curry at home as it has shrimp paste :d Good to know that thai pastes is available in Mangalore too..:d Will look out for it next time
