KARIVEPILLAI SOYA FRY

I had few leftover curry leaves fryed in coconut oil for my hair usage. So I did not want them to throw them all as it was crunchy cum crispy with coconut oil flavour. So I came up with this recipe :) This is a super snack item with a nice crunchy bite :) Hope u all like it :)
INGREDIENTS

1/4 Cup of Fryed Curry leaves

1/2 Cup Soya nuggets

1 tsp Garlic powder

2 tsp Pepper powder

1 tsp Amchur powder

1 tsp Jeera powder

Garam Masala (optional)

Salt to taste

1 tsp Coconut oil

METHOD

Cook the soya nuggets as per the direction and keep aside. In a bowl, mix all the powder items. Heat oil in a pan. Drop in the powder mixture and let it fry under low flame. Once u get a nice aroma, put the soya with salt and fry them in oil. Make sure its well coated with masala. Fry them until u get a nice crust on soya. Once its done, crumble the curry leaves into powder and add. Give it a nice stir. Serve hot as a snack :)

SOYA WRAP(USING LEFTOVER ITEMS]

Here is the best way to use leftover items into a delicious one pot snack in a jiffy :) This wrap acts as a best filling snack for kids after coming from school and they would love like anything as it fully loaded with cheese, egg and with masaaledar filling. Filling can be anything with mushrooms or veggies or paneer or leftover chicken tikkas as well. So do try guys ;)
INGREDIENTS

Leftover chappati dough

Leftover soya bhajji

1 egg for each chappati.

Grated cheese

Tomato ketchup (optional)

Oregano to sprinkle

Oil

Salt to taste

METHOD.
Make half fried chappati and keep itside. In a pan, break egg. Season with salt and beat well. Grease oil in non stick. Spread egg batter and after few sec, place one chappati above so that it sticks on the  batter. Flip it on other side and allow to get it cooked. Place them on plate. Spread tomato ketchup if needed. Keep the soya filling in the middle, grated cheese and fold. Make sure to fold the sides in as you roll your wraps so the fillings are enclosed. Serve hot

SOYA BURGERS

Soya burgers are the mini meals for kids. They just love them to have soon after coming from school if I am right because my gal is just crazy of burgers :) These soya patties are very healthy and super simple to make. Veggies like grated carrots, peas or sweet corns anything what kids love can be incorporated. Its then ended up placing fresh veggies, mayo & cheese which is of course another fav ingredient. So don't wait for long to try out this recipe ;) Go ahead

INGREDIENTS

Ready made Burger Buns

Mayonnaise

Cheese slices

Onion slices

Tomato slices

Lettuce (optional)

1 tbsp Oil

INGREDIENTS FOR SOYA PATTIES

2 Cups Minced Soya

1/2 Cup Boiled Potatoes

3/4 Cup Breadcrumbs

1 tbsp Grated Ginger and Garlic(fresh)

1/2 Cup Chopped Onion

2 tbsp Coriander leaves

1 tsp Red chilly flakes

Pinch of Garam masala or curry powder

1 tsp Lime juice.

Salt to taste

METHOD

In a bowl, mix all the ingredients listed above one by one for making soya patties. Mix well and divide them into 4 big patties or according to the size of ur buns.

Heat oil in a tawa or grilled pan. Shallow fry the patties on both the sides till crisp or until the colour changes brown. Keep them aside and place cheese upon each hot patties. Don't skip this process as it tastes very good when the cheese gets a bit melted on patties :)

Now cut the buns into half. Spread 1 tbsp of mayonnaise on each base and place some onion slice, tomato, lettuce on them. Upon that cheesy soya patties, some seasoning and cover them with another half of the mayo buns.

Secure with a toothpick and serve immediately :)

SOYA TIKKIES WITH LEFTOVER POTATO UPKARI

I had some lefover potato upkari which I ended up making tikkies.  As you all know potato is the binding agent, does not matter if its in the form of side dish. I even make aloo parathas using leftover batata upkari :) This time taught of mixing with soya granule and give it a shape of tikkes which tasted heavenly. It was crunchy from outside and very soft from inside. No one will ever be able to guess what this fun snack used to be :)
INGREDIENTS

1/2 Cup Leftover Potato upkari

3/4 Cup Soya Granules

3 Cloves Garlic

Pinch of Amchur powder

1 tsp Red chilly pd

1 tsp Garam masala pd

2 tbsp Coriander leaves

1 Green chilly

Cornflour if needed

Rice flour for dusting.

2 tbsp Oil for shallow fry

Salt to taste

METHOD
In a blender add all the ingredients except coriander leaves, cornflour, rice flour and oil and blend coarsely for a min. Transfer them into a bowl. Add cornflour if the mixture is moist. The consistency should be thick enough like a dough. Heat oil in a non stick pan. Apply some oil in ur palms and make small patties. Spread rice flour in a plate and roll each patties on the rice flour and gently shallow fry them on both the sides till crisp.
Serve hot with mayo or ketchup :)

SOYA KOFTA CURRY

Soya kofta is a curry in which the deep fried round dumplings of soya are cooked in spicy gravy of tomato and cashew paste. The addition of  fresh cream gives you a smooth and rich texture to the gravy. This curry goes well with chappati or butter naan or phulkas in lunch or for dinner.

INGREDIENTS FOR KOFTA

1 Cup cooked Minced soya

1 Boiled and grated Potato (small)

1 tbsp Garlic garlic paste

1 tsp Cumin pd

1 tsp Amchur pd

1 tsp Chilli pd

2 tsp Cornflour

Salt to taste.

Oil for deep fry.

INGREDIENTS FOR CURRY

2 Onions Chopped

2 Tomato Chopped.

1 Green chilly

2 tsp Jeera.

1 tbsp Garlic

2 tsp Coriander pd

1 tsp Turmeric pd

2 tsp Kitchen king masala

1 tbsp Cashew paste

2 tbsp Fresh cream

1 tbsp Oil.

Water as per required

Coriander leaves for garnish

Salt to taste.

METHOD

In a big bowl, add minced soya, grated potato and rest of the ingredients except oil, mentioned one by one and knead into a dough. Add cornflour as needed. Grease your palms and make small balls and keep it aside. Heat oil for deep fry and fry them till golden brown.

For the curry, Heat oil in pan. Season with jeera and add garlic, green chilly and onions. Fry till the onions turns slight brown. Add all the masala powders and saute well. Add tomato and cashew paste and stir well for about 3 to 4 min. Depends upon the gravy, add little water and cook over medium heat. Stir in between occasionally. Add fresh cream and coriander leaves and give it a nice mix. Transfer the gravy with a bowl and garnish with fried soya kofta. Serve hot with chappati or naan.

CRISPY SOYA CUTLETS

Crispy soya cutlets are very crunchy and non spicy snack. Its acts as a great appetizer on parties or family together. In this recipe I have used cornflour as a binding agent instead of potatoes. Its only because I wanted my cutlets to tastes only the flavour of soya. But if you want to, then you may add :) taste might differ. For the non veg lovers, same procedure can be prepared using minced chicken
instead of soya granules :) It would tastes equally good. Its a very good finger food :)

INGREDIENTS

1 Cup Soya Granules (cooked)

2 Onions chopped

3 cloves of Garlic

2 tsp Pepper pd

1 1/2 tsp Garam masala

1/2 tsp Turmeric pd

3 tbsp Corn flour

2 tbsp Breadcrumbs

Salt to taste.

1 tbsp Butter.

Oil for deep fry.

INGREDIENTS FOR COATING

1 Egg

Breadcrumbs as required.

Salt

METHOD

Heat butter in a pan. Add onions and garlic and saute well. Then add turmeric pd, garam masala and pepper pd and mix well. Once the masala are well fry ed add in the cooked granules and  mix well with the fry ed masala. Season with salt. Allow the mixture to cool.
Now drop in the corn flour and breadcrumbs. Add more or less accordingly. Now with the help of your hands take a small portion of the soya mixture and give it a shape of a tight cylindrical one. Keep it inside the refrigerator for about half an hour. This makes the shape fit and firm.
Meanwhile in a bowl, beats the eggs well with salt and pepper. Spread the breadcrumbs on a plate evenly. Now the fun part comes :) Take each soya shaped mixture and dip it in egg and then coat them with breadcrumbs. Keep it aside. Follow the same steps with rest of the soya mixture.

Heat oil in a kadai. Drop the soya mixture slowly one by one and deep fry them very carefully until golden brown on both the sides. Drain them on a tissues.
Serve hot with ketchup or with your fav dip :)

SOYA PAKODAS

Special thanks to my Dear Amma :) who taught me this special recipe. Love you ma :) I just love it alot.

Soya pakodas can be made on special occasion like kids party as these pakodas are very rare and unique tasty fritters. Its nice and crisp on outside and soft and warm on inside. Do try this, I bet your kids would love as my daughter and her friends would adore this fritters like anything :)
INGREDIENTS

1 Cup cooked Soya chunks.

1 1/2 Cup Besan

1 tbsp Rice flour

1 Chopped Onion

1 tbsp Chopped Ginger

2 tsp Chopped Curry leaves

1 Green chilly

1 tsp Chilly powder

Pinch of Hing

Pinch of Cooking Soda

Salt to taste

Water as required.

Oil for deep fry.
METHOD

Heat oil in a kadai for deep fry. In a bowl add all the ingredients except cooked soya. Add enough water to make the batter not too thick or thin consistency. If you make it too runny, the batter begins to drip off the soya. Adjust salt as needed.

Now dip each soya into batter and pour carefully into the oil.  Fry till golden. Drain them on tissue and serve hot.

FRIED SOYA BIRIYANI

I am great fan of soya chunks. I adore them adding in samosas, cutlets, curries and this time I ended up making soya biriyani which came out soo perfectly and delicious. As always the best combi to match with biriyani is any type of raitas. Do try this on weekends and enjoy :)


INGREDIENTS FOR FRIED SOYA

Handful of cooked Soya Chunks.

1 tsp Ginger garlic paste.

1 tsp Chilly pd.

Pinch of Lime juice.

Salt to taste.

Cornflour for dusting.

Oil for deep fry.

METHOD

Mix all the ingredients except oil and marinate for half an hour. Deep fry till it becomes crispy.

INGREDIENTS FOR THE REST.

1 cup Cooked Basmati rice. (soak rice and cook rice accordingly)

1 Onion

1 Tomato

1 Green chilly.

1/2 Cup Boiled veggies. ( carrots, beans, cauliflower, potato)

3 tbsp Mint leaves

3 tbsp Coriander leaves

1 tbsp Curd.

1/2 tsp Ginger garlic paste.

1 tbsp Biriyani masala or Garam masala.

1/2 tsp Turmeric pd

1 tsp Chilly pd.

1/2 tsp Lime juice

Salt to taste.

1 tbsp Ghee or Oil.

METHOD

Heat ghee or oil in a pan. Add sliced onion and fry till transparent. Add ginger garlic paste , green chilly and fry till the raw smell disappear. Then add  tomatoes ,turmeric pd, chilly pd and biriyani masala and fry till the tomatoes turns mushy and all the masala are well fry ed in oil or ghee. Drop in boiled veggies, curd, lime juice and mint - coriander leaves and fry for another 2 min.

Before adding rice, add half of fried soya chunks and mix well so that the masala are well combined with soya. Lastly add the cooked rice and mix well. Garnish with mint leaves or fried onions and serve hot with ur fav raita. I have garnished with remaining fried soya :)

SOYA POPCORNS

These are cute little crunchy, moist and delicious soya popcorn's. Its tastes just like chicken popcorn's we get it in KFC :) I am so much in love with this so do my little one. It tastes fab when it is dipped with mayonnaise.You can also try with normal ketchup or with barbecue sauce. I pretty much think these bites are perfect for any occasion or get together or on a kids party.



INGREDIENTS

1 Cup Cooked Soya chunks

1 tsp Garlic powder.

1 tsp Pepper powder.

1 tsp Paprika (optional)

1 Egg.

Cornflour for dusting.

Breadcrumbs for coating

Oil for deep fry.

Salt to taste.



METHOD

Beat the egg in a bowl adding a pinch of salt and keep it a side.

Place the cooked soya chunks into a bowl. Marinate them with garlic pd, pepper pd, paprika and salt. Meanwhile heat oil in a kadai.

Dip the marinated pieces into cornflour, then to the egg mixture being sure they are fully covered and finally roll them in breadcrumbs.

Drop those into hot oil carefully one by one and fry till golden brown.

Serve hot with ur fav dip.

SPICY SOYA MASALA

Soya chunks is an excellent source of protein and rich in vitamin B. I make it a point to include this on my diet :) Though it does not have its own flavour, but has the power to absorb the flavouring when it is mixed with the gravy. Whenever I feel like having non veg or whenever I crave to have when the meat is not at home, I satisfy my taste buds preparing such curries :) because it is known to be synonyms for vegetable meat. Now coming back with recipe, it is a simple and healthy dish where cooked soya are added to the freshly Indian spices, onion and tomato. This yummy and pleasantly spicy curry makes a perfect side dish with chapati or paratha or naan,



INGREDIENTS

1 Cup Cooked Soya.

2 Onions.

2 Medium Tomatoes.

1 tbsp Ginger Garlic paste.

1/2 tsp Turmeric pd.

2 tsp Red chilly pd.

1 tsp Coriander pd.

1 1/2 tsp Kitchen king Masala.

1/2 tsp Jeera.

1 tbsp Butter.

1/4 Cup Milk.

Coriander leaves for garnish.

Salt to taste.

Water as needed.


METHOD.

Cook the soya according to the instruction given on the pack. Once its done keep aside on a plate. If the soya is big enough, then u can even cut into two and keep.

Heat butter. Add onions and saute till its slight brown. Add ginger garlic paste and fry. Next drop in tomatoes and all the spice powder given above. Saute nicely till the raw smell disappears. Allow the mixture to cool and later grind into smooth paste. Heat butter and jeera. Pour in the masala and fry again for about 2 min. Add milk and adequate amount of water and bring it to boil. Drop the cooked soya and saute till it is covered with all the masala. Cover with lid and sim for about 1 min. Garnish with coriander leaves and serve hot with roties or naan.

SOYA CAPSICUM FRY

A very simple healthy veg curry with capsicum and soya.  Capsicum is such a versatile veg that you can blend in any way and Soya which is full of protein is an substitute with meat. These 2 veggies together makes a delicious side dish with ur daily meals.  Its very easy and does not need lots of preparation. Do try it friends :)


INGREDIENTS.

2 Cups Chopped Capsicum.

1 Cup boiled soya.

1 Onion.

1/2 tsp Jeera.

2 tbsp Chopped Garlic.

1/2 tsp Turmeric pd.

1 tsp Red Chilly.

1 tsp Sambar pd.

A Pinch of Amchur pd.

1 tsp Oil.

Salt to taste.


METHOD. 

Soak soya chunks in hot water to soften. Squeeze off the water and rinse 3 times. Drain water thoroughly. Keep it aside.

Heat oil in a pan. Add jeera and then garlic and onions and fry till they become translucent.  Add all the masala pd followed by the capsicum. Cover with a lid and let it cook for about 2 min. Add the soya chunks and mix well till all the masala combined together. Cover for another 2 min. Before serving sprinkle with amchur pd and serve hot.

SOYA CRISPS

On my last post, it was soya bean curry which had impressed my family members alot. Therez the next comes the soya appetizers. Now this is what I call 2 in 1 recipe :) . I had kept a half cup of cooked soya aside to prepare somthing different delight for kids who hate having the nutritious food. Just throw in any type of veggie with a touch of garam masala and finish it off with shallow fryed soya crisps. I did with simple coating of riceflour and fryed. It tastes even better when its dipped in beaten egg mixture and then rolled in breadcrumbs and lastly deep fryed. Do try this awesome healthy snack and try giving to ur kids with their fav dipping.




INGREDIENTS.

1/2 Cup Cooked Soya bean.

2 tbps Chopped Onions.

1 tbsp Grated Carrots.

1 tbsp Grated Beans.

2 tbsp Chopped Soya nuggets (Optional).

1/4 Cup Mashed Potato.

2 Cloves of Garlic.

1 tsp Garam masala.

Pinch of Turmeric Powder.

Salt and pepper to taste.

Oil for shallow fry.

Rice flour for coating.

Chopped Coriander leaves.

METHOD.

Place cooked soya in a plate and remove the outer skin just giving pressure with 2 fingers. Because the skin does not get mashed up. So its better to remove them when its used for these type of recipe.
Mash soya and potato together. Keep it aside.
In a pan, add 1 tsp oil. Add garlic, onions, carrots, beans and fry for a min adding a pinch of salt, turmeric and garam masala pd.
Drop these mixture into mashed soya and potato. And finally with coriander leaves. Mix well. It gets thickenen. Then make small balls and flatten them. Just the way we make aloo tikkies.


Heat oil in a pan for shallow fry. Meanwhile spread rice flour on a plate. Coat those flatten tikkies into flour and drop them carefully into oil.

Roast them on both the sides.
Serve hot.

SOYA BEAN CURRY

Soya are rich in vitamin E and fibers. Regular intake of soya reduces risk of heart diseases, prevent breast cancer, reduce cholesterol and many more. There are lots of soya products like soya milk, soya nuggets, soya flour which are very very healthy. I am sure there are only few people who love the taste of soya. In my family, I am the only person who adore soya products. When my mom visited my place she brought these soya bean out of which I decided to prepare a curry for the first time. To my surpirse, eveyone loved it. Frankly, the matter that i dont like is smell of cooked soya bean but I love its flavour which is just perfect when its mixed up with masalas. This curry goes well with chappati, naan, kulcha etc.

INGREDIENTS.

1 Cup Boiled Soya.

Whole Masala (1 Stick Cinnamon, 3 Cloves, 1/2 Star anise, 1 cardamom, 3 black peppercorns)

1 tbsp Ginger Garlic Paste.

2 Medium size Onions.

2 Tomato.

1 tsp Jeera.

1 Green chilli.

1 tsp Kashmiri chilli pd.

1/2 tsp Turmeric pd.

1 tsp Coriander pd.

1 tsp Garam masala.

1 tsp Oil.

Coriander leaves for garnish.

METHOD.

Soak soya overnight and pressue cook them till its done.

In a pan heat oil. Add Jeera and whole garam masala. Fry them for a sec. Then drop ginger-garlic paste, greenchilli, and onions. Saute onions till they become translucent. Now add tomatoes, red chilli pdr, coriander pdr, turmeric pdr, garam masala and salt. Saute till u get a nice aroma and all the ingredients are well fried in oil.

Add cooked soya and enough water to get a thick gravy. Adjust with salt. Bring the curry to a boil and remove from flame.

Garnish with corinander leaves.

Serve hot with chapati or naan.

SOYA MANCHURIAN

Soya is supposed to be very good for women. It has full of Proteins and natural minerals. I have noticed most of the people don't like to eat those big chunks as it taste like flesh. But in case of me and my daughter smera we just love the taste and its texture. I also use the soya granules which can be added along with the fillings for samosas. Here i come up with my manchurian chinese version.





INGREDIENTS.

1 Diced Onion.

1 Diced Capsiums.

2 tbs Soya sause.

2 tbs Tomato ketchup.

1 tbs Chilli sause

1 tbs Chopped Ginger.

1 tbs Chopped Garlic.

1 1/2 tsp Corn flour.

3 tbs Water.

2 tbs Oil.

Salt to taste.

MARINATION.

100 grms Soya chunks.

1 Egg.

1 tbs Ginger garlic paste.

1 tbs Soya sause.

2 tbs Cornflour.

Salt to taste.

Oil for deep fry.

GARNISH.

Spring onions ( greens part)

METHOD.

Soak soya chunks in 3 cups of boiling water for about 10 min. When it becomes soft , drain the water and squeeze all the water from soya. Repeat the same process for 2 to 3 times to remove the raw smell of soya.

Later marinate the soya with egg , cornflour , ginger garlic paste , soya sause and salt. Keep aside for half an hour.
Mix corn flour with water and keep it aside.

Later deep fry these marinated soya chunks until it gains brown colour and keep it a side.

Heat some oil in a pan. Add fresh ginger and garlic. Saute for few sec and then add onion, capsium and salt to taste. Make sure the onions and capisum are half cooked.

Now add soyasause , ketchup and chilli sause. Sprinkle some water and saute again for a while and bring to boil. At this stage add the mixture of corn flour inorder to get thick gravy.

Lastly add the fried soya chunks and mix well.

Garnish with spring onions and serve hot.
