CREAM OF MUSHROOM SOUP

Yet another Mushroom recipe :) which is soo yummy and comforting. Yeszzz  its the "Cream of Mushroom soup". Its light and keep our body warm during Monsoon season. One of the most flavourful, healthy and quick soup prepared in no time :) Great treat for the Mushroom lovers :) Do try it.
INGREDIENTS
1 Cup Thinly sized Button Mushroom.
2 tbsp Chopped Onions
2 tsp Chopped Garlic
1 1/2 tsp Cornflour
1 1/4 Cup Milk 
1 tbsp Melted Butter
Salt & Pepper to taste.

METHOD
Heat butter in a pan. Saute the chopped garlic and onions for about 1 to 2 min followed by mushrooms. Add in the salt and stir till its cooked. Now add the cornflour and mix well. At this stage, pour the milk stirring continuously inorder to avoid lumps. Adjust the consistency adding water inbetween. Now sprinkle pepper and let it boil for another couple of min. Transfer into the bowl and serve hot hot.  
NOTE :1) You can add any varities of Mushrooms or even combine them. Equally tastes good.
2) You can dilute milk with water as per your taste buds.
3) Dont skip adding Cornflour because that ingredient  thickens the soup.

TOMATO CINNAMON SOUP

Soups are good appetizers. Its always good to have a bowl of any soup before a meal. But I love them to have it on my dinner with a piece of bread because its light and simple and taste delicious equally. Here is the simple tomato soup with the touch of cinnamon powder which highlights the flavours of tomatoes and of course the addition of Carrots brings a unique colour to the dish. If you need your soup to be creamy, then you can add up fresh cream in the end. Do try this super simple soup.
INGREDIENTS

3 Tomatoes

3 Garlic Cloves

3 Pearl Onions

1 Small Carrot.

1/2 tsp Cinnamon powder

1 tsp Butter.

Water as needed.

Crushed Pepper

Salt to taste.

Cream (optional)
METHOD

Pressure cook or boil chopped tomatoes, onions and carrot in a vessel adding water. Once its cooked, keep aside to cool. Now grind it into a smooth paste adding adequate amount of water. Sieve and keep it aside. Now add butter in a pan, drop in the grind ed paste followed by pepper powder, salt and cinnamon powder. Bring them to boil and serve hot with a piece of roasted bread.

CHICKEN CLEAR SOUP

Having peppery chicken soup is the best ever treatment for cold. It clears off throat infection if any due to addition of ginger and pepper. The whole spice gives you a nice touch of spicy flavour that gives an awesome concoction to throat, nose and even fever in one serving. Do try this soup and check out the surprising result :)

INGREDIENTS

200 grams Chicken (with bone pieces)

3 Cups of Water

2 Cloves

1/2 inch Cinnamon

5 Black pepper

2 Tbsp Chilly Vinegar (Add more if needed)

1 tsp Soya sause.

1 tsp Crushed Ginger.

Salt and Pepper to taste

1 tsp Butter.

FOR THICKEN

1 tbsp Cornflour.(mixed in cold water until thin paste)

METHOD
Clean and wash the chicken. Pressure and cook till 5 whistle all the ingredients except vinegar, ginger ,butter and the seasoning. Strain the stock,  shred the meat and discard the bones. Heat butter in a pan. Add in the crushed ginger and fry for a min. Pour the stock, vinegar, soya sause and freshly crushed pepper and boil to a boil. Add the cornflour mixture and stir well. Add the shredded chicken and remove from flame.
Ladle it in a soup bowl and serve hot :)

CREAM OF GARLIC SOUP

This classic soup gets the double hit of creamy and roasted garlic flavour. Its delicious and one

 of the great cold weather comfort. The extra flavour of oregano plus roasted garlic gives

 a unique twist. Its a real treat for the garlic lovers.





INGREDIENTS


20 cloves of Garlic

1 Onion.

1 Potatoes.

1/2 Cup Milk.

3/4 Cup Cream.

1 Tbsp Butter.

1 Tsp Oregano.

Water as needed.

Salt and Pepper to taste.


METHOD

Heat butter and add 20 cloves of garlic and fry till it becomes brown...remove and keep it aside...in the same

 remaining pan, add 1 onions with salt and saute for 2 min then add 1 potatoes with half cup of milk and 

cream....cook well under low flames till potatoes becomes tender. Cool and grind the mixture along with the roasted

 garlic. Reserve few for garnishing....Add the grounded paste into a pan and adjust the consistency accordingly 

adding milk or water. Sprinkle oregano or freshly grounded pepper and serve hot..... Garnish with cream while 

serving :)

CREAMY PUMPKIN SOUP

A delicious soupy combination of carrots, onion and pumpkin. Its a soup flavoured with a touch of garlic and served garnished with heavy cream. Yet nutritious, healthy and refreshing soup.



INGREDIENTS.

1 Cup Pumpkin pieces.

1/4 Cup Carrots.

1 Small Onion.

1 Cloves of Garlic.

1 Reduced Milk.

1 tsp Butter.

Water or Vegetable stock as needed.

Salt and Pepper as per taste.

METHOD.

Heat butter in a pan. Add garlic, onions, pumpkin and carrots and saute. Add required quantity of water or stock into it. Cover and cook till all the ingredients becomes tender. Blend them and again pour into another pan. Add milk and allow the mixture to boil. Season with salt and pepper. Add a spoon of heavy cream and serve hot hot. :)

BEETROOT CARROT SOUP(microwave version)

This is the healthy, light, refreshing soup learnt from my dear aunt. Its simple to taste and very easy to cook in microwave. This soup is ideal for the winter. The addition of coconut milk to the soup balance the acidic taste of tomatoes.


INGREDIENTS.

1 Beetroot.

1 Carrot.

1 Tomato.

2 tbsp of Coconut milk.

Water as needed.

Salt and Pepper to taste.

METHOD.

Microwave chopped beetroot, carrot and tomato for about 6 min high. Remove the skin the tomato and allow the mixture to cool. Now blend them till u get a smooth paste. Transfer them into other micro bowl. Add salt and water as per required. Micro for about 2 to 3 min. Sprinkle with pepper and garnish with coconut milk.

THAI ASPARAGUS MINI PRAWN SOUP

Soups are the best appetizer to have specially on cold days or for the people who down with cold. I prepared this soup when I was in US. I was very much interested using asparagus when I see them in grocery shop in stalks and thats somthing news that I didn't ever found in India. I wanted to know how it taste. So gave a try first with making a soup under ''Thai Cuisine'' which I would like to dye for. I used mini prawns as a best combo with asparagus and gave it a nice fresh flavour of bazil leaves which has turned into hearty, perfect and filling soup.



INGREDIENTS

1 Onion.

2 Asparagus.

Handful of Mini prawns.

1 tbps Thai curry paste.

2 Cups of Vegetable or Fish stock.

2 tbsp Chopped Garlic.

Handful of Chopped Bazil leaves.

1 tsp Butter.

1 tsp Fish sause.

Salt and pepper to taste.

Method.

Clean and wash the asparagus and cut them into medium size of 3 to 4 inch long. Heat butter in a kadai. Add diced onions, garlic and asparagus with a pinch of salt. Saute for 2 to 3 min till they are half cooked. Add thai paste and pour in the stock and fish sause. At the time of boiling drop the mini prawns. Cover with a lid and sim for 1 min. Season with pepper and garnish with fresh chopped bazil leaves.

TOMATO SOUP

Soups are the best appetizers and most common among them is tomato soup. I was very tempted to make this tomato soup when I browsed ''SIREESHA'S'' blog. Shez soo adorable and an excellent cook indeed. Now shez on break to India and hope she join our blogging world soon. Miss you sireesha and also your yummy recipe. Her soup ingredients was very simple and inviting that I decided to make the very next day also that was her microwave preparing. The change I made is I added fryed bread pieces on the top to make it a crispy bite while slurping hot soup.


INGREDIENTS.

4 Ripe Steamed Tomatoes.

3 Cloves of Garlic.

1 Chopped Onions.

1 tbsp Butter.

2 tbsp Cornflour.

3/4 cup Milk.

Salt and pepper to taste.

Fryed Bread pieces for garnish.


METHOD.

In a microwave container add tomato, garlic, onions and salt. Micro high for about 7 to 8 min.

Remove tomato's skin and puree the mixture in blender.

Melt butter in microwave for 10 sec. Combine flour and stir briskly making sure not to from any lumps and micro for another 1 min. Thus the flour leaves its raw taste.

Slowly add milk and give it a quick brisk. Add tomato mixture and micro again for about 5 min.

Add required amount of salt and pepper to salt and finally garnish with croutons or any of your favourites.

PINEAPPLE HOT AND SOUR SOUP

Here comes another unique pineapple soup prepared by my hubby. Its very divine and extremely delicious. In a first glance it seems like a regular soup but by addition of couple of things it makes it different. When I had my first sip, I just loved the flavour of garlic, and the best part was the heat of the crushed red chilli flakes and the pepper. Perfect when one is down with cold or throat ace. Here comes the recipe..



INGREDIENTS

1/2 Cup Pineapple piece.

1/4 Cup sliced Onions.

1/4 Cup sliced Tomatoes.

Few pieces of Mushrooms.

Pinch of crushed Red chilli flakes.

4 Cloves of Garlic.

2 tbs Soya sause (or) Fish sause.

1 tsp Chilli sause. (Optional)

Pinch of Tobasco Pepper sause.

Basil leaves (or) coriander leaves for garnish.

1 tsp Oil.

1 Cup Vegetable Stock (or) Water.

1 tsp Lime juice.

Salt and pepper to taste.

METHOD

Heat oil in pan. Add finely chopped garlic. Fry them till brown. Keep aside.

In a another pan heat oil. Add onions,tomato, mushroom and pineapple with a little bit of salt. Cover it for 2 min. Then add soya sause, chilli sause followed by adding water. Bring the mixture to boil. At the time of removing from flame, add fryed garlic, crushed red chilli flakes and basil leaves. Srinkle pepper on the top.

CREAMY PALAK SOUP

Soups are my favourites. Before I used to make soups with readymade Knor packets mix. But its always good to have fresh homemade soup right? This recipe "Palak soup", I started preparing after my daughter born. As palak is very good source of iron rich and healthy, I started giving her right from her 7 th month . ButI was giving her under simple process of just grinding boiled palak with salt and then strained. Later as Smera grown up I started making slight variation that increase its taste and here it goes my Microwavable recipe which can be prepared quicky-


INGREDIENTS

1 Bunch Palak.

1/2 Cup Milk.

2 tbs Chopped Shallots.

1 tbs Chopped Garlic.

5 Sliced Button Mushrooms.

1 tbs Butter.

Salt and Pepper to taste.

Water to sprinkle.

1 tbs Fresh Cream (optional)

METHOD

Wash the spinach leaves and discard the thick stem. In a microwable bowl add half of butter and micro for 20 sec. Add palak leaves and sprinkle some water and cook for 5 min high.

Cool the mixture and puree in the blender along with milk. Keep aside.

In another micro bowl, add the remaining butter and cook for 20 seconds on high. Add chopped onions,garlic and sliced mushroom and micro for around 3 to 4 min or till the onions are trasparent.

Now add the spinach puree, salt and pepper and bring to boil for about 5 min high covered.

Add fresh cream just before serving.

MUSHROOM SOUP

My daughter Smera is a mushroom lover so as me and my hubby. Mushroom is very easy to saute and nutrients to just about anything. There are many types of mushrooms, out of which I like button mushrooms the best and can be enjoyed in so many different types of recipes. I love mushroom soup which I hope u guys are also gonna luv it.





Ingredients.

2 cups chopped mushrooms.
1 cup milk or cream.
2 tsp unsalted butter.
1/2 chopped onion.
3 pods of garlic.
Salt and pepper to taste.

Garnish.

Few chopped mushroom.
Coriander leaves.

Method.

Heat 1 tsp of unsalted butter. Add garlic, chopped onion, mushroom and salt one at a time and saute till mushrooms are cooked. Allow to cool.
Grind the mixture along with milk.
Heat remaining unsalted butter and fry the rest of the chopped mushroom for few sec. Put the grounded mixture to the fried mushroom. Bring to boil. Add salt and pepper according to taste.
Garnish with coriander and serve hot.
