KHANDVI

Herez the most popular Gujarati snack Khandvi ๐Ÿ˜Š๐Ÿ˜ŠOne of the toughest one which is made from simple ingredients Besan, yogurt and spices. Actually this recipe was prepared by My hubby boy 'R' ๐Ÿ’“when I told him I feel like having something unique cum yummy snack during the time of my fasting๐Ÿ˜œhehe so he digged in to make this for me. The taste was supa soft which just melted in mouth tempered with crunchy and munchy seasoning. Luckily his first trial was Superhit ๐Ÿ‘๐Ÿ˜ 
He was hunting for the recipe and thus came across one page which looked soo tempting.

CARAMELISED BREAD PUDDING (EGGLESSS)

This is the tried recipe from hebbarskitchen.com ๐Ÿ‘ Thanks for sharing this osm recipe :) This pudding tasted super simple, light and soo delicious that this has became one of our family favourite delight. I followed the same instruction as per given except the cooking process. Instead of steaming, I used Baking process. In a preheated oven, I kept it on a pan, filled with hot water and baked for half an hour under 180 degree ๐Ÿ˜

EGG CHETTINAD

Chettinad cuisine uses variety of spices. The dishes are made with freshly grounded masalas. This cuisine is one of the spiciest and most aromatic in India. So this time I was tempting to have something which gives a touch of chettinad flavour when I came across one interesting site. So here it goes.

FRENCH CROISSANTS

It was a great pleasure trying out Croissants for the first time which is just similar to the puff pastries. The dough is  layered with soft butter and then folded and rolled many times. The best combo breakfast with croissants is the butter or jam. And the fun part is you can shape them as you like :) The texture of the croissants should be soft and airy on the inside and golden coloured crusty look on outside :)

MANGO CAVIAR

I came cross one interesting site which made me try this awesome recipe. The pic was so attractive and tempting that I could not stop myself trying out. The result was superhit. These tiny bubbly delight tastes sooo good and yummy that you would never stop putting them in your mouth again an again :) They just burst up and then melts automatically. This is so simple to make only with 3 ingredients. No doubt kids will surly fall in love with it.

These can be eaten as it is or with Pannacotta.

GARLIC CHICKEN CURRY

Chicken cooked in simple and mild flavours with an extra garlic punch. Its very simple to make and amazingly delicious. This curry goes well with normal steamed rice or parotta or with tandoori naan. I know you all will love it so much so do try out this yummy curry and let me know the feedback soon ;)

INGREDIENTS

2 Big Onions

1 Tomato

1 tbsp Grated Ginger

Curry leaves

Salt to taste.

INGREDIENTS FOR MARINATING CHICKEN

1 kg Chicken pieces

11/2 tbsp Thick Yogurt

1 tsp Turmeric powder

Salt to taste.

INGREDIENTS FOR GARLIC MASALA

2 Big Garlic

2 1/2 tbsp Coriander seeds

1 tbsp Jeera

8 Dry Kashmiri chilly

2 tsp Oil

INGREDIENTS FOR GARAM MASALA

1 tbsp Fennel seeds

4 Elachi

4 Cloves

Stick of Cinnamon

1 Star anise.

METHOD

Firstly marinate the chicken with ingredients given above for about half an hour. In a blender, powder the ingredients given under garam masala for a min and keep it side.
Next to make the garlic masala, heat oil in a pan add jeera and coriander seeds and saute till they are fried. Then drop in red chilly and garlic pods. Fry till the garlic turns slight brown. Allow the mixture to cool and later grind it into a thick paste adding required amount of water. Heat 1 tbsp of oil in a kadai. Add onions and saute till translucent. Add grated ginger, tomato and curry leaves and stir well till tomatoes becomes mushy. Now add the garlic masala mixture, marinated chicken and garam masala all together and stir well. Season with salt. Cover with a lid and allow the chicken to cook under low flame. If you need more gravy then add a cup of water and let it cook. Once chicken gets cooked transfer the curry into a bowl and garnish with coriander leaves. Serve hot hot.

KARAIKUDI FISH CURRY


First time tried Karaikudi fish curry which was just outstanding and yummicious when we had with simple steamed rice. As I was browsing for the recipe, I came across https://www.awesomecuisine.com/ where the picture of the curry was eye catching and extremely delicious. Thank you so much for the recipe :)
This curry is so simple and quick to make with basic ingredients. The recipe intend to add Brinjals but I did not as I did not had enough stock. Also I wanted to prepare on the same day that I can't even wait for a day to taste this curry ;) Guys do try this excellent dish. Its a definite treat for fish lovers :) no doubt at all :) The best ever combi to have this curry is with plain steamed rice. Or with sannas or neer dosa as well :)

STUFFED BRINJAL FRY (ANDHRA STYLE)

This is the Andhra style stuffed brinjal fry, that I grabbed from the site indianhealthyrecipe.com. The ingredients mentioned are so simple and so easy to prepare in jiffy. As said in the recipe, its true that the addition of peanuts and sesame seeds gives a unique flavour and taste to the veggie. Do try this at home for sure. For a twist and making it very more special for my kid, this is what I did ;)
As soon as I removed the fryed masala brinjals from the cooking pan, I stuffed some grated mozzarella cheese which got melted up automatically and tastes cheesy masala brinjal fry. My daughter loved them like anything :) Its a must recipe guys so do give it a try :)

CHOCOLATE BOWL

This is a must try guys. My hubby tried this creative chocolate bowls made from ballons. I filled each with cake slice and fresh pineapple slices. You could also serve with  icecream scoops too. Not only kids but also adults would adore these chocolaty dessert. These goodies are always better anytime when you could eat the bowl ;)
NOTE: You can make these bowls look attractive by dipped the top of the ready chocolate bowls into the melted chocolate and then pressing them into sprinkles. I wanted to try that but i did not had enough sprinkles for that. So do try these and let me know the results ;)

BHAPA DOI

Bhapa doi is one of the popular Bengali steamed pudding using thick yogurt blended with milk and condensed milk. This is ideal for summer. This can be also baked but as per I tried, we preferred the steam med one both taste wise and look wise. Its best when served chill and is a great choice when you need to make a dessert in jiffy :)
INGREDIENTS

1 Cup Milk

400 grams Condensed milk

1 Cup Thick Yogurt

Handful of Dry fruits (i used almonds)

Saffron (OPTIONAL)
METHOD

In a big bowl, mix milk, condensed milk and yogurt and whisk together till well blended. Put it in a small steel bowls. Add some dry fruits on top and steam them in a steamer for half an hour or till its cooked.When its done, set aside to cool to room temperature. Chill them in refrigerator.
Take a serving plate, loose out the ends with the help of knife and flip them.
Serve chill.

POACHED EGG BURGER

My first try on poached eggs was a success. I tried and followed the instructions referring http://www.simplyrecipes.com/ The pic was eye catching and made me try making as my family are the egg lovers. I would say this is the best way to cook eggs specially for the person who are on diet :). Poaching allows the proteins in food to uncoil slowly, without squeezing out moistureI prepared poached egg as an evening snack for my daughter which ended up making burgers and it was sooo yummy and soo delicious.

INGREDIENTS FOR BURGER

1 Bun

Mayonnaise

Onion slice

Tomato slice

Salt and pepper to taste

Cheese slice

METHOD
Cut the bun into 2 halves. Apply mayonnaise on both the halves. Place the tomato and sprinkle some salt on it. Then place the cheese ad upon that onion. Carefully and with gentle touch keep the poached egg and finally with the other half of bun on top.
Serve immediately.

TENDER COCONUT PUDDING

Tender coconut pudding from scratch that's homemade is a way better than the store bought mix. This is tried and tasted pudding from the site www.kothiyavunu.com. The texture is soo creamy cum rich due to the addition of grind ed malai in milk and condensed milk. Its soo delicious and therez noting better than this dessert. The best part I love is the tiny bits of tender malai when you spoon them is just incredible :)  Do try this for sure. This is a tried and tasted recipe that,I would like to recommend to all who are specially egg lovers. Its an innovative egg rolls which is not only delicious or healthy but its a fun part to prepare too. We were surprised to see the video that forced us to prepare these delight. Extra ingredients can also be added accordingly. It can served as an appetizer. Well I would say its the best healthy snack to be served for kids soon after they be back from school :)

GREEN PEAS HALWA

This is a tried recipe from the blog  Aayisrecipes.com.  Her click was so catching that I had to make it  immediately. Green peas halwa was totally a new sweet dish to me and I could not wait to taste it. I was at my mom's place and  she had stored lots of frozen fresh peas in freezer. Thats it. Within no time, I grabbed those and prepared it. The dish was so delicious and tempting. As Shilpa intended, we could not stop eating it as it was a great success. CURRY LEAF KOZHUMBU


Yet another super delicious healthy kozhumbu learnt from one of my blogger pal from Raks kitchen :) Her picture was very attractive and eye catching which pushed me to try this tasty dish. I have followed each and every step mentioned on her page :) Normally we all use the curry leaves as a flavouring agent but at the end rather than eating we just throw it away. But in this recipe, curry leaves plays an important role as we have used the main ingredient to the maximum level which not only enhance its taste and flavour but also offers wonderful health benefits both externally and internally.

TUTTY FRUITY COOKIES

This cookies are so easy, tempting and crumbly to make. Though I dont have convection oven, I tried making on Tandoor which came out quiet well and crunchy as well. This is prepared with all purpose flour, powdered sugar, butter, milk pd,and ofcourse tutty fruity which is the main ingredient and the best one loved by our kids :) I got this amazing recipe from ruchiskitchen.com. Thank you for sharing this recipe. My daughter just adore this cookies a lot. The recipe mentioned to add rose water which was optional but I did not use it. Instead of that I added Vanilla essense. DOODH PEDA

I am a dairy lover and I just love having homemade dairy products specially when it comes my favorite Pedas. This is a tried recipe that I mom prepared when I was on my vocation to Mumbai ;) It was really yummy and soo delicious and on other side its appealing and inviting too to see these cute little babies :) My mom adopted this recipe from Subbu's Kitchen. The only change was my amma did not add Kesar as I am not very fond of kesar flavour. Rest as per the instruction on the site. Thanks a lot for sharing this wonderful sweet delight. PALAK PARATHA



I love paratha's soo much and specially when it comes with greens. I normally grind palak and make chappati or puries. This is the somthing new I learnt from Raks kitchen which tastes fabulous.
