THAI ASPARAGUS MINI PRAWN SOUP

Soups are the best appetizer to have specially on cold days or for the people who down with cold. I prepared this soup when I was in US. I was very much interested using asparagus when I see them in grocery shop in stalks and thats somthing news that I didn't ever found in India. I wanted to know how it taste. So gave a try first with making a soup under ''Thai Cuisine'' which I would like to dye for. I used mini prawns as a best combo with asparagus and gave it a nice fresh flavour of bazil leaves which has turned into hearty, perfect and filling soup.



INGREDIENTS

1 Onion.

2 Asparagus.

Handful of Mini prawns.

1 tbps Thai curry paste.

2 Cups of Vegetable or Fish stock.

2 tbsp Chopped Garlic.

Handful of Chopped Bazil leaves.

1 tsp Butter.

1 tsp Fish sause.

Salt and pepper to taste.

Method.

Clean and wash the asparagus and cut them into medium size of 3 to 4 inch long. Heat butter in a kadai. Add diced onions, garlic and asparagus with a pinch of salt. Saute for 2 to 3 min till they are half cooked. Add thai paste and pour in the stock and fish sause. At the time of boiling drop the mini prawns. Cover with a lid and sim for 1 min. Season with pepper and garnish with fresh chopped bazil leaves.

THAI RED SHRIMP CURRY

''Thai red curry'' is the one that we order whenever we visit our favourite thai cuisine restaurant. The one we offen visit when we were in US. I really miss those days :( . But currently I came across one Indian stores were I was just surprised to notice thai red curry paste here at mangalore. In no time I just grabed those and that night we had delicious red curry with hot hot steamed rice that tastes the same we had at US. The real flavour comes out when therez addition of fresh basil leaves and mainly the flavour of shrimps which I love the most. Veggie lovers can avoid adding non veg items.



INGREDIENTS.


1 Onion.


1 Capsicum.


1/4 Cup Red Bellpeppers.


2 tbsp Thai Red curry paste.


1 tbsp Fish sauce.


1 tbsp Soy sauce.


1 Cup Coconut milk.


3 Cloves of Garlic.


4 to 5 Leaves of Fresh Basil.


6 to 7 Shrimps.


1 tbsp Butter.


Salt to taste.


METHOD.


Heat butter in a pan. Add fresh garlic, onions and capsicum with a pinch of salt. Make sure the veggies are half fried. Add the red curry paste and saute for a while. Then followed by the soy sause, fish sause with adequate amount of water. Add shrimps and bring water to boil. Switch off the flame and add coconut milk and fresh chopped basil leaves. [Make sure not to boil after adding coconut milk.]


Serve hot with steamed rice.

THAI BASIL CHICKEN

Basil (tulsi) the 'king of herbs' is one of the stronge flavourful herb . Its medicinal value improves the efficiency of kidney, to treat insect bites, reduces the cholesterol content in the arteries, relief from cold , asthma and so many. Before I was just unknown of the food adding basil as a main ingredient until I visited US and had food at Thai restaurent. From that day Thai cuisine had become our favourites and specially my kiddo, just love to have her favourite basil chicken. We always order Pineapple fried rice with basil chicken. I was very much inspired to prepare the same into my kitchen. My first trial basil chicken had succesfully end up with yummy and flavourful comfort meal. Yummm ..feel like having now :( . The flavour of the fresh basil and fish sause is just unbeleivable. Guys, its a must recipe to try. Chicken can be substituted with minced pork or turkey or beef or any type of seafood. It just tastes the same.


INGREDIENTS

1 lb Minced Chicken.

1 Cup Fresh Basil.

2 Chopped Onions.

10 Pods of Garlic.

1 Long Sliced Capsicum.

3 Slit Green Chillies.

2 Kaffir lime leaves.

1 tsp Black Soy Sause.

2 tbsp Fish Sause.

1 tbps Oil.

Salt and pepper to taste.


METHOD.

Clean and drain only the basil leaves. Discard stem.

Heat oil in a wide pan. Add the garlic, followed by the chopped onion, sliced capsicum with a pinch of salt. Make sure dont over cook as it must be a bit crispy. Later add the minced chicken, green chilli and stir fry for few mintues until the colour of the chicken changes. Close with a lid and allow it to cook.

When the chicken is cooked, add kaffir leaves, soy sause and fish sause and saute so that the mixture is fully covered with sauses. When its done add the chopped basil and stir fry for another few min until the basil is wilted. Sprinkle with a dash of pepper and serve hot.


DIFFERENT NOTE:

November 5 was a special day I enjoyed to my fullest. First thing - my parents had a visit to my place and had a nice joyful time having my mom's homemade prepared goodies. It was awesome. Secondly I met one of my fav blogger pal ''APARNA OF APSKITCHEN''. She came to mangalore for a vacation. Instead we are orkut friends tooo. So through scrapping and conversation finally decided to meet. I was so excited when I invited her to my home. Had a wonderful time. Also we had been for shopping and ended our day going to Mangalore's best 'Ideal icecream' parlour. I must say she was soo cute and beautiful on her looks, her talking were soo interesting that I dont know how our time flewed. It was too good to meet her that I just cannot express how sweet and memorable those moments are :).
