ORANGE PEEL KA PICKLE

Its Orange season yeyyy😋. So this time, I tried something with the orange peel :) Yup u hear it right its Orange peel :) We make pickle out of Lime peel so taught Y cant b with orange peel ;) The result came out quit good but the flavour of the peel was extra bitter than the lime peel. People who love bitter flavour would love this pickle :) Along with that, the crunchiness of ginger and green chillies makes the pickle perfect.
Note : Cut the cleaned orange peel into pieces. Apply salt and refrigerate them for few days or till the peels turns soft. Then its ready to make :)

INGREDIENTS

1 Cup cutted Orange peel (cutted into small pieces)

1/4 Chopped Ginger

3 Green chillies

2 tbsp Kashmiri chilly powder

2 tsp Coriander powder

Pinch of Turmeric powder

1 tsp Vinegar

3 tbsp Gingelly oil

Hing as per required

Salt to taste

METHOD

Heat oil in a pan. Add marinated orange peel with little salt and stir for a min followed by ginger and green chilly. Once the peel pieces becomes tender, add chilly powder, turmeric pd, coriander pd and hing. Mix well for another few min till you get a nice aroma of fry ed masala. Switch off the flame add vinegar and mix well thoroughly. Transfer them in a dry cleaned container jars. Serve with curd rice :)

ORANGE PEEL CURRY

Just like we prepared mango curry or ambe umman in konkani style, my motherinlaw prepared using orange skin which turns really good. Infact its peel is very helpful in reducing the chances of constipation, reduces heartburn, and mainly high in fiber content which helps in weight loss. Now coming back with recipe, in this curry, you can feel the taste of slight bitterness of the peel, its sweet, sour and spicy due to the addition of crushed pepper. Not most of the people would love this but if possible do give it a try :)

INGREDIENTS.

2 Orange skin

1 Cup Jaggery.

2 tbsp Raw Rice.

3 Dried Red chillies.

1 tbsp Crushed Black peppercorns.

1 tsp Mustard seeds.

1 tbsp Urad dal

1 tsp Jeera.

Few Curry leaves.

1 tbsp Coconut oil.

Salt a pinch.

Water nearly 2 cups or plus.

METHOD.

Firstly soak rice nearly for 40 min. In a pan dry fry dried red chilli and peppercorns separately. Make sure it does not burnt. Now blend the soaked rice with dried fried red chilly. Add water as per needed. Finally add the peppercorns and give a quick grind so that its not finely powdered but like a crushed process. Keep it aside.
Meanwhile wash orange skin thoroughly and cut them into medium size. Place them into cooking vessel with adequate water. Put Jaggery piece and allow it to sit for about half an hour. This will make jaggery melts soon.Later bring them to boil and Sim until the orange peel are well cooked. Then add the blended mixture and stir adding a pinch of salt according to taste. Remove from flame.
Last but not the least. Heat oil in a pan. Add mustard seeds followed by jeera, urad dal and curry leaves. Fry them and pour it on to the orange skin curry.

Serve hot hot.

ORANGE KHEER

A simple, delicious fresh kheer with oranges is one of the unique kheer I have ever had. This can be prepared during fasting time. It can be flavoured with different ingredients like cardamons, saffron and dry fruits. But I like to keep it simple only with flavour of the fruit. As we all know oranges are citric fruit, the main point to be noted is whenever you use citric fruit,  it should not be added when the mixture is hot. So do remember, only after cooking it completely it should be added at last.


INGREDIENTS.

1 Cup Orange segments.

1 Liter milk

Half tin of Milk made.

2 tsp Sugar.

1 tbsp Cornflour paste. ( optional )

Pinch of Cardamom pd ( optional )

METHOD.

Peel and remove the seeds and skin of oranges just show on the below pic.


Drop in milk and sugar in a pressure cooker. Once the milk gets boiled, close the lid and put whistle and sim it for half an hour. This process thickens the milk and gives u a nice condensed flavour.

Once the pressure is gone, add the mixture into big non stick pan. Add milk made and stir on for 3 min continuously. If u need the milk to thickens more add cornflour paste and stir. Remove from the flame and allow to cool completely.

Once cooled add the orange segments and mix well. Refrigerate and serve cool.
