SWEET POTATO BONDA

Just as the normal potato bondas we make at home, I tried preparing the same out of sweet potatoes which came out so well. Crispy on outside and soft inside. Perfect snack during rainy season :)



INGREDIENTS FOR THE FILLING.

2 Sweet potatos (boiled)

1 tsp Mustard seeds.

2 tsp Urad dal.

1 tbsp Grated Ginger.

2 Green chilly

1 tbsp Chopped Curry leaves.

Pinch of Turmeric pd.

Salt to taste.

1 tbsp Coconut oil.

Oil for deep fry.

INGREDIENTS FOR BATTER.

1 1/2 Cup Gram flour.

2 tbsp Rice flour.

2 tsp Chilli pd.

Pinch of Hing.

Pinch of Cooking soda.

Salt to taste.

Water as needed.



METHOD.

Heat oil in a kadai. Drop in mustard seeds and allow them to dance in the oil. :) Add urad dal and fry till the dal turns slight brown followed by ginger. Then add the curry leaves and green chilly and fry until chilly turns slight crisp. Now add the turmeric powder and finally the boiled mashed sweet potato. Season them with salt and mix well. Remove from fire and allow them to cool. Make sure its not soggy or loose. Shape them into round small balls and keep aside. Meanwhile prepare the batter adding all the ingredients as mentioned above. The batter consistency should be slightly thicker than the idly batter.

Heat oil in kadai for deep frying. When the oil becomes hot, dip the potato balls into batter and slide them carefully into the hot oil. Turn them after a couple of minutes and keep on turning very carefully till the bondas turns slight brown in colour.

Serve hot with green chutney or tomato sauce.

GRILLED SWEETPOTATO CUTLETS

''Cutlets'' are very popular, simple and easy snacks. This time, I had a twist adding sweet potatoes instead of normal potatoes which was much more healthier version. The taste was superb with a mix of sweet and also spicy. It can be had as a perfect starters for the parties or as a tea time snacks. Do try this -


INGREDIENTS

2 Boiled Sweet potato.

1/2 Cup Grated Carrots.

1 tsp Ginger paste.

1 tbsp Chopped Onions.

1 tsp Red chilly pd.

1/2 tsp Garam masala pd.

1/4 Cup Chopped Coriander leaves.

1 tsp Chopped Mint leaves.

1 Cup Bread crumbs.(appro)

Salt to taste.

Oil for shallow fry.


METHOD

Mash the boiled sweet potatoes.  Add all the ingredients except oil. For the binding purpose add 2 to 3 tbsp bread crumbs and mix thoroughly. Now divide the mixture equally. Make small balls and flatten it. Now toss each flatten cutlets into breadcrumbs and shallow fry them on a grilled pan or normal pan till golden brown or until done. Serve hot with a dip of green chutney.

SWEET POTATO UMMAN

We use "Sweet potato" very rarely. My granny used to make steamed potato. Its tasty having as it is. After marriage I learnt this ''Sweet potato umman'' from my mother in law. Shez expert in cooking. Hot and sweet makes the dish yummy and its fast, easy and even tastes better for the next day. Its a good combo with Dosa or Idlies.



INGREDIENTS

1 medium sized Sweet potato.

1/2 Tomato.

1 tbs Urad dal.

1 tbs Chilli powder.

1 tsp Mustard seeds.

1 tsp Turmeric powder.

1/2 Water.

1 tsp Coconut Oil.

Pinch of Hing.

Few curry leaves.

METHOD.

Cut sweet potato into piece, immersed in water. Keep it aside.

In a pan heat oil. Add mustard seeds and ural dal. When urad dal starts to turn slight brown, add curry leaves, tomato ,chilli pdr, turmeric powder and salt.

Add sweet potato with addition of water. Simmer for few min and allow them to cook till the pieces are tender.Later its cooked mash few piece so tht it forms into thick gravy like consistency.

Before removing from fire, sprinkle little with hing and coconut oil.
