CLAMS MANGALOREAN STYLE CURRY

First time tried making Clams curry. In Mangalore its called Kube curry or Marwai curry. My little love just love the flavour of shell fish. Whenever my neighbour aunty used to give us, she forces me to make at home:) So thus taught of giving a try for sake of her ;) And yaa it came up quiet delicious :) This clams curry is very traditional and popular dishes among the Christians of Mangalore. The clams are cooked in the spicy coconut mixture which goes well with simple rice and dal. I served with Idiyappams :) The one which I love is its chewy texture and salty ocean taste just amazing :) The same recipe will work good on Mussels or oysters as well :)

NOTE: The actual recipe says Tadka is important which is of mustard seeds and curry leaves but I have avoided because my daughter wanted to have it plain :) But I recommend all not to avoid this step. The flavour of curry leaves would really increase the flavour of curry :)


INGREDIENTS

500 Grams Clams (cleaned)

2 Onion (one of frying and one adding in gravy)

1 Tomato

1 tsp Ginger garlic paste.

2 Green chilly

Water as needed

Salt to taste

1 tbsp Coconut oil

INGREDIENTS FOR MASALA

8 Kashmiri chillies

2 tsp Coriander seeds

1 tsp Jeera

1 tsp fenugreek seeds

3 Methi seeds

1 tsp Turmeric powder

2 tsp Oil

3/4 Cup Coconut grated

1 tsp Tamarind extract.

1 Onion

METHOD
Heat oil in a pan. Roast red chillies and keep it aside till u get a roasted smell. In the same pan, add coriander seeds, jeera, fenugreek seeds and methi and fry. Transfer them into the mixer and grind along with coconut, tamarind, turmeric powder and onion adding adequate amount of water. Keep it aside.

Heat oil in a kadai. Season with mustard seeds and curry leaves. Add one onion, ginger garlic paste and fry till translucent. Drop in the grounded masala with adequate amount of water. Season with
salt. Add sliced onion, tomato, green chillies and bring the curry to boil. At this stage, add clams and cook for about 8 to 10 min under low flame until the curry thickens. Now you can see the clams are opened and cooked well. Garnish with coriander leaves. Serve hot :)

THAI RED SHRIMP CURRY

''Thai red curry'' is the one that we order whenever we visit our favourite thai cuisine restaurant. The one we offen visit when we were in US. I really miss those days :( . But currently I came across one Indian stores were I was just surprised to notice thai red curry paste here at mangalore. In no time I just grabed those and that night we had delicious red curry with hot hot steamed rice that tastes the same we had at US. The real flavour comes out when therez addition of fresh basil leaves and mainly the flavour of shrimps which I love the most. Veggie lovers can avoid adding non veg items.



INGREDIENTS.


1 Onion.


1 Capsicum.


1/4 Cup Red Bellpeppers.


2 tbsp Thai Red curry paste.


1 tbsp Fish sauce.


1 tbsp Soy sauce.


1 Cup Coconut milk.


3 Cloves of Garlic.


4 to 5 Leaves of Fresh Basil.


6 to 7 Shrimps.


1 tbsp Butter.


Salt to taste.


METHOD.


Heat butter in a pan. Add fresh garlic, onions and capsicum with a pinch of salt. Make sure the veggies are half fried. Add the red curry paste and saute for a while. Then followed by the soy sause, fish sause with adequate amount of water. Add shrimps and bring water to boil. Switch off the flame and add coconut milk and fresh chopped basil leaves. [Make sure not to boil after adding coconut milk.]


Serve hot with steamed rice.

BAKED TILAPIA

Having fish fry with lunch or dinner is a comfort meal for me. Its the fabulous snack that I can have at any time. There are couple of varieties of preparation, but I like to try with one simple normal masala frequently. The fish I have used is Tilapia but its equally good with Pomfret and shrimps also.


INGREDIENTS

1 Tilapia fish.

3 tsp Chilli powder.

1 tsp Turmeric powder.

1/2 tsp Hing.

1 tsp Crushed pepper.

2 tbsp Coconut oil.

2 tbsp Lemon juice.

Salt to taste.

METHOD.

Clean the fish and score it by making cuts an inch or more. Wash and pat it dry with tissue.

Season fish with salt and lemon juice and allow to rest for 5 min.


Meanwhile, in a bowl, mix rest all the above ingredients.


Marinate with masala both inside and outside of the fish and allow to rest for half an hour.


Bake it in an pre heated oven for 15 to 20 min or till its done. Fish should flake easily with a fork when its done.

UR RECIPE

Here comes few recipe that I tried with inspiration from my blogger's site. I truly enjoyed making all your recipes and end result came out soo tasty.

ALASANDA VADA.

I was wondering whats this alasanda means? Later came to know they are the fritters made with black eyed pea the one, I didnt like as a child and now was tempted to try vada made out of it. Oh boy, her pictures were just enough to push me into making them the awsome recipe. It was just delicious and enjoyed having it with a cup of coffee. I got this recipe from ''MAHANANDI'S BLOG''.


[Changes I made - I added 2 tbsp of Rice flour to the batter. This prevents oily vada's.]

CHICKPEAS SALAD.


Friends, this is the must recipe to try. This is one of the simplest and very flavorful healthy snack. Thesedays whenever I prepare something with chickpeas, I just keep it aside few of them for salad. No measurment nothing, as you can add more or less whatever you need. To make it more attractive and colourful, fruits or any type of veggie can be added. I adopted this recipe from one of my friend ''JAYA'S BLOG''

FISH MASALA FRY.


No words to express about this unique fish fry. This was heavenly. My hubby selected this recipe and he was very much tempted to try out, when he had a glance at ''SHILPA'S BLOG''. The very next day we got fish and had a nice time having that spicy delectable fish fry. We prepared this continuosly for 2 days. Still feel like having it. This is also somthing different fish fry I have ever tried. You can notice, the cooking process she have mentioned to add water sounds really interesting. Also she has described 3 masala's for the marination. In that we tried the 1st one. Came out dam good. I can say, I could have only this for dinner everday.


[Changes - I used Pomfret fish and in masala, did not add coriander seeds. One more thing, in this recipe not even a touch of oil is used but my hubby added a drop of coconut oil for the extra flavour.]

POMFRET IN GREEN MASALA

Fish fry makes me crazy. It has almost become my favourite dish .Whenever I prepare fish fry for lunch or dinner, I have it on the spot hot hot soon after the fry. Cannot wait to have it along with another food. Now that I said, I cannot wait, you can notice my pic below that I have shown 2 marinated fish, but on serving plate therez only one. Thats because when I finished my first fish fry, my hubby and my kiddo had a small piece of bite and within no minute, we three had almost finished. Thank god that I was able to take a snap of the second fish and that too without any garnishing :) hehe. This is somthing different type rather than our normal masala and its must to try. Its just a flavourful blend and the fresh lime juice and mint leaves are the best compliment to the fish fry. Here goes my recipe..


INGREDIENTS.

1 Pomfret.

1 tbs Ginger garlic paste.

4 tbs Grated Coconut.

1 Green chilli.

4 strands of Corinander leaves.

3 strands of Mint leaves

1/2 tsp Turmeric powder.

1 tbsp Lime juice.

Oil for shallow fry.

Salt and pepper to taste.

METHOD.

Wash and clean the fish using vinegar water. This reduces the fishy smell. Patch it dry using tissue towel. Spinkle inside and outside salt and pepper and keep it aside.


Grind the rest of the ingredients into the mixer into fine paste. Use very less water to make a paste.

Marinate the grounded masala on fish and let it rest atleast for 1 hour.


Heat oil in a pan. Fry the fish on both side for about 3 to 4 min or until its cooked.

Squeeze fresh lime juice on the top and serve hot.

PINEAPPLE FISH NOODLES

I know it sounds different. As of now you all would have known pineapple fruit is one of our favourite fruit specially for my hubby. He loves making different recipe using pinapple fruit and he does, out of which few comes success. This is one of them. (few more recipe to come) :) Wonderful additition to this recipe are the fish piece.The real flavour comes out when the fish and the pineapple piece are fully cooked with noodles and thats what this is special. You can feel the sweetness, tangyness and spicy too in this whole meal. I personally really liked this recipe so much. Perfect to have with gobi or mushroom manchurian as a sidedish. Yum..

INGREDIENTS FOR MARINATING FISH.

1 Tilapia Fillet.

1 tbsp Chilli pd.

1/2 tsp Turmeric pd.

Pinch of Hing.

Salt to taste.

INGREDIENTS FOR MAKING THE REST.

1 Pack Egg Noodles(Cooked)

1 Big Onion.

2 tbsp Ginger-Garlic paste.

1/2 Cup Pinapple pieces.

1 1/2 tbsp Soya sause.

1 tbsp Worchestershire sause.

1/2 tsp Chilli sause (Optional)

1 tbsp Red curry paste.(Thai)

Salt to taste.

Oil.

GARNISH.

Coriande leaves.
Pinapple pieces.

Grape.


METHOD.

Cut fish into small piece and marinate them with above ingredients for about half an hour.

Heat a pan with oil. Fry onion and gingergarlic paste. Throw in rest of the ingredients from pinapple piece till salt. Make sure you add salt very less because these sause and also the marinated fish contains salt.

Later on add few drops of water and drop th marinated fish. Cook till its done.

Lastly add cooked noodles and garnish with coriander leaves few fresh pinapple pieces and grape.

Serve hot.

SHRIMP BIRIYANI

Shrimp or the prawns are the one that I love a lot under seafood section. I buy them freshly in chinese market. So I decided to prepare biriyani out of shrimps on weekends and thats the day I like to prepare so that I could cook with extra time :) . That was my first trial and came out soo well. Making biriyani is a bit of preparation but its well worth. The flavour of shrimps makes it exceptional.



INGREDIENTS FOR MARINATING SHRIMPS.

1/2 pound Shrimps.

1 tsp Chilli powder.

1 tsp Coriander powder.

Turmeric powder a pinch.
1 tsp Ginger Garlic paste.

1 tsp Meat masala.

FOR RICE.

1 Cup Cooked Basmati rice.

1 Onions .

1 Tomato.

2 Green chillies.

1 tsp Chilli powder.

1 tsp Coriander powder.

1 tsp Ginger Garlic paste.

1 tsp Meat masala.

2"Cinnamon.

1 Bay leaf.

3 Cloves.

2 Cardamom.

Salt to taste.

2 tbsp Oil.

(NOTE: While cooking rice I added 2 cloves, 1 cardamom, cinnamon and 1 bay leaf with 1 1/2 cup of water. This gives a real flavour to the rice.)

METHOD.

Devein the shrimps and wash adding vinegar in water. This reduces the fishy smell. Marinate shrimps with above given marinated ingredients. Let it sit for an hour.

Heat oil in a pan, add all the whole spices followed by the onions, tomato and ginger garlic paste. Fry them till it turns brown. Add chilli pd , coriander pd , turmeric pd , garam masala and salt and fry them for 1 min. Then add the shrimp marination and cook on high flame for 5 mins and simmer till the oil comes out.


Add the cooked basmati rice and stir well till the rice is fully absorbed by the masala. Garnish with corinder leaves.

Serve hot with raita.

SPICY MINI PRAWNS FRY

This is the fabulous dish thats just perfect as an appetizers or a snack. I adopted this recipe from one of my hubbies friend 'ANIL'. Hez expert in cooking specially preparing non veg items. We offen have a gettogether on weekends at our home or their home. So his recipe will be there for sure :). He prepares the recipe with raw medium prawns or shrimps. But I taught of giving a try on mini cooked prawns which also tasted delicious. The real flavour comes when its cooked and fryed in Coconut oil.



INGREDIENTS.

1 LB Cooked mini prawns.

1 1/2 Cup Chopped Shallots.

2 tbsp Chilli Powder.

1 tsp Turmeric Powder.

1 tsp Hing.

2 tbsp Lemon juice.

1 tsp Grounded Pepper.

Few Curry leaves.

3 tbs Coconut oil.

Salt to taste.

METHOD.

Marinate prawns with chilli pd, turmeric pd, hing, lemon juice, pepper and salt. Let it sit for half an hour.

In a kadai, add 3 tbs of oil and fry the shallots. Once its half cooked add the curry leaf and marinated prawns. Mix well under low flame to uniformly incorporate everything.


Fry nearly for 15 to 20 min till they are slighty crispy. At the time of removing from flame, drizzle extra coconut oil on the top.

Serve hot.

BBQ SHRIMPS AND CHICKEN

Picnics are the great way to spend time together with family as well as with friends. When it comes with combined good food, it simply tastes better with a company of fresh air on sunny day,who will miss such precious moments? So one day all our friends planned for an outdoor picnic. There we decided to have BBQ get together potluck party nearby park. Had lots of fun and the real fun was the gents preparing food on BBQ ,where as we ladies sat down relaxing ,chatting and commenting on them. On my side we decided to prepare shrimp recipe. It was mind blowing when it comes under BBQ preparation. In this post I would like to add one of our friend's chicken recipe too. Same recipe can also be broiled in the oven. The marination for shrimps can also be done with mushrooms and eggplants. That too tastes delicious.
On my sudden glance, I was so thrilled to see ''SIG'S GRILL IT EVENT'' as I was checking her blog.

MARINATING SHRIMPS.

1/2 pound Shrimps.

1 Diced Green Bellpeppers.

1 Diced Red Bellpeppers.

1 Diced Onions.

1 tbs Ginger Garlic paste.

2 tbs Red chilli powder.

1 tbs Turmeric powder.

1/2 tsp Hing.

1/2 tsp Pepper.

1/2 tbs Vinegar.

Salt to taste.

6 to 7 Bamboo Skewers.



METHOD.

Soak bamboo skewers in water, to keep from burning during grilling.

Combine all the spices with Shrimps and Veggies and marinate them atleast for half an hour.


Thread shrimps and veggies according to order on skewers.

When heat is ready, grill them around 3 to 4 min on eachside. Make sure not to overcook the shrimps.

Serve on skewers.

MARINATING CHICKEN.

Whole Chicken.(thighs and drumstick)
1 cup Yogurt,

3 tbs Red chilli powder.

1 tbs Ginger Garlic paste.

Salt to taste.

METHOD
Clean the chicken and make a slit with a sharp knive.

Mix all the ingredients with chicken and marinate for half an hour.

When heat is ready, place it on the grill.

Serve hot on plate.

SPICY FISH CURRY

Fish curry with cooked tapioca or hot plain rice are the best ever combo. Its a comfort meal. Usually I have heard people says, fish curry prepared in clay pot tastes really good. But never had chance to make it. Also fish curry tastes better the next day. We make fish curry immediatly when we bring fresh fish from chinese market. Rajesh too helps me to make this recipe. Tilapia or Tuna fish or Mackerel is also perfect for this curry. And specially for Veggie guys, you can too make the same curry adding boiled potatoes instead of fish. That too tastes delicious. So heres my recipe!

INGREDIENTS FOR MARINATION.

1 Medium Size Fish.( I used Mackerel)

3 tbs Coriander powder.

1 tbs Chilli powder.

1 tsp Turmeric powder.

3 inch 4 or 5 Crushed Ginger.

2 slit Green chilly.

Salt to taste.

INGREDIENTS FOR GRAVY.

1 Diced Onions.

3 tbs Coriander powder.

Lemon sized Tamarind.

1/2 cup Hot water.

1 cup Coconut milk.

1 tbs Oil.

Few Curry leaves.

Salt to taste.

GARNISH.

5 Chopped Shallots.

Few Curry leaves.

METHOD.

Soak the tamarind in 1/2 a cup of hot water for 10 minutes. Now mash the tamarind with your fingers . Strain through a sieve to extract all the pulp. Keep pulp aside.

Cut the fish into 1" thick slices and marinate it with marinated items listed above for half an hour.
Heat oil in a pan. Add diced onions, curry leaves and salt. Fry till the onions are half cooked. Add coriander powder and fry till u get a nice aroma.

Add tamarind pulp and bring it to boil. At the time of boiling gently add the fish marinade. Close the pan with the lid and cook on medium heat till the fish is cooked. Increase the heat and reduce the gravy if needed.
When the fish pieces are cooked and firm, slowly stir in the coconut milk and bring to a boil on low flame.

In another pan,heat oil and fry chopped shallots and curry leaves . Lastly garnish on the fish curry.


Serve with rice or chapathi.

MALAI SHRIMP CURRY

Am crazy of shrimps and prawns when it comes my fav in seafood. When we bring shrimps, I prepare this recipe for sure. The gravy combines the flavours of shrimps and coconut-milk into a rich creamy flavour. Prawns can also be added instead of shrimps. Usually served with hot steamed white rice.




INGREDIENTS.

7, 8 Shrimps

1 Chopped onions

1 Chopped Tomatoes

1 Green chillies

2 tbsps Garlic paste

1 tbsp Ginger paste

1 tbsp Garam masala

2 tsps Coriander powder

1 tsp Chilli powder

1/4 tsp Turmeric powder

1 tsp Cumin powder

1 cup Coconut milk

Few Curry leaves

3 tbsp Oil

Salt to taste

Coriander leaves for garnish.

METHOD

Peel Shrimps and remove the veins if it is not already cleaned.

Marinate shrimps with chilli powder , turmeric and salt. Keep it aside.

In a pan heat oil. Add ginger-garlic, greenchilli, curry leaves and onions. Saute onions till they become translucent. Now add tomatoes, red chilli pdr, coriander pdr, turmeric pdr, garam masala and salt. Saute till u get a nice aroma and all the ingredients are well fried in oil.

Add marinated shrimps , saute and cook well. Add water if needed. Simmer on low heat for about 2 min.

Lastly add coconut milk and bring to boil.

Garnish with coriander leaves.
