Bok choy Garlic stir fry

As I have mentioned on my previous post that I am big fan of half fried veggies, herez the next with Bok Choy which is filled with full of fiber, vitamins and minerals. I was lucky enough to get baby bok choy😀Its another wise known as "Chinese Cabbage".This can be eaten raw as well and most offen these are added in soups but I prefer simple Stir fry 😋It light, crunchy and got a mild flavour.

INGREDIENTS
1 Bok Choy 
10 Crushed Garlic cloves
1 tsp Dark Soya sause
1 tsp Black Pepper
Pinch of Oregano
Salt to taste.
Roasted White sesame seeds (optional) for garnish
Butter

METHOD
Trim off the ends. Rinse the bok choy under running water. Slice them in halve lengthwise or remove the individual leaves and rinse. Patch it dry.
Heat butter in a non stick pan. Add garlic and fry them till golden brown. Add in the bok choy and stir fry for few sec. Then add soya sause, salt and black pepper, and roast them until the stalks turns half tender and also till the sause glazes the greens. Lastly sprinkle some oregano and transfer into a serving bowl or a platter. Garnish with roasted white sesame if needed.

STEAMED VEG MOMOS

Veg or Non veg, my family loves Momoes💓 First time try ed at home and it was a superhit. Well I am not good at shaping them but seems to be OkToky 😛 My little one too helped me and yaa shez my helping hand of course👧 The stuffing I used is the veggies sauteed in ginger, garlic and soya sause which is stuffed in the thin dough and then steamed. Stuffing can be of any your fav choice. Non veg lovers can use minced chicken instead of veggies. These dumplings are super delicious and filling. I like them to have with schezwan sause 😋

NOTE: For the healthier version, instead of maida, wheat flour can be used ;) The texture might be little bit hard but the flavour tastes equally good.

INGREDIENTS FOR DOUGH
1 cup Maida
1/2 tsp Salt
Water for kneading
Oil for grease

INGREDIENTS FOR STUFFING
 2 Cups Grated veggies (cabbage, carrots and beans)
1 tbsp Spring Onion
1 tsp Grated Ginger & Garlic each
Salt and pepper to taste
1 tsp Oil

METHOD.
Prepare the momos dough just like we make it for chappaties. Grease and keep it aside covered.
Take grated veggies cum spring onions in a bowl. Heat oil in a pan and add grated ginger and garlic. Now add veggies and soya sause. Season with salt and pepper. Cook the veggies on high flame just for a min and remove. Now the fun part comes. Divide the dough into 3 equal parts. Dust some maida and start roll using rolling pin into a thin big circle uniformly.Make small rounded puris by cutting it using round shaped small lid. Now take a sheet, stuff the filling and start pleating the edges slowly and gather everything and seal it. For more shapes you can view youtube :)
Heat a steamer and arrange momos on the plate. Steam for 15 min under low flame. Serve hot with your fav dip.

JACK FRUIT MANCHURIAN

Gobi Manchurian is always loved by kids and adults. Its a great demand. This time I tried Manchurian from Jack fruit which was just up to the mark :) I tried this when there was a grand feast of the main ingredient Jack fruit at Mangalore. Tasted so many varieties out of which I found this is something more interesting and unique. Its a dry version and makes for a good starters or snacks. I adopted the same method just the way I prepare gobi manchurian. The only thing I did was I steamed the pieces for 5 to 8 min in steamer then followed  rest of the steps same for marination and method. Make sure the pieces of jack fruit is tender.

OMELET AND EGG MANCHURIAN

Manchurian'S are all time fav as I am very fond of chinese cuisine from my childhood days. It makes a perfect side dish with fried rice and noodles. This dish was prepared when I was craving to have eggs and at the same time with Manchurian type. So taught of coming to an idea of preparing an omelet and then mix in chinese sauce laden hot an sour gravy. Theres another recipe of boiled egg manchurian which I would like to share with u guys.



INGREDIENTS.

1 Diced Onion.

1 Diced Capsicums.

2 tbs Soya sauce.

2 tbs Tomato ketchup.

1 tbs Chilly sauce

1 tbs Chopped Ginger.

1 tbs Chopped Garlic.

1 1/2 tsp Corn flour.

3 tbs Water.

2 tbs Oil.

Salt to taste

INGREDIENTS FOR MAKING OMELET.

2 Eggs.

3 tbsp Chopped Onions.

1 tsp Grated Ginger.

2 tsp Milk.

Salt and Pepper to taste.

1 tsp Oil.

METHOD.

Break the eggs till frothy. Drop the rest of the ingredients except oil and mix well. Heat oil in a pan and egg mixture and swirl it around the pan. Cook on low flame till all the sides are well cooked. Slowly flip it over and cook on other side too. Slide the omelet on to the plate and allow to cool. Dice the omelet into required shapes and keep it aside.

Heat some oil in a pan. Add fresh ginger and garlic. Saute for few sec and then add onion, capsicum and salt to taste. Make sure the onions and capsicum are half cooked.

Now add soya sauce , ketchup and chilly sauce. Sprinkle some water and saute again for a while and bring to boil. At this stage add the mixture of corn flour in order to get thick gravy.

Lastly add the sliced omelet and bring to boil. Garnish with spring onion and serve.

EGG MANCHURIAN.

Add the boiled eggs into the Chinese gravy as mentioned above and serve hot with noodles or fried rice.

GOBI MANCHURIAN

Most of the people are very fond of cauliflower (gobi) and I am one among them. I would love them to have as a curry or sidedish or as a starters the most. When thinking of gobi starters , ''GOBI MANCHURIAN'' is only the one that clicks my mind. All in my family just die to have this at any time. Therez nothing to explain about this popular dish. In short, it tastes superb and tempting will be the same even after having them. Am I right? My daughter just adore to have only the fried florets. So till the final stage, I get only the half to prepare the rest :) hahaha.



INGREDIENTS FOR FRYING GOBI.

1 Medium sized Gobi.

4 tbsp Maida.

1 tbsp Cornflour.

2 tsp Ginger Garlic paste.

2 tsp Soya sause.

1 egg whites.

Salt and White pepper to taste.

Oil for deep fry.

Red colour (optional).

INGREDIENTS FOR SAUSE.

2 Onions.

1 Capsicum.

1 tbsp Chopped Ginger.

2 tbsp Chopped Garlic.

2 Slits of Green chilli.

3 tbsp Soya sause.

2 tbsp Tomato sause.

2 tbsp Chilli sause.

Pinch of ajinamoto.

Red Colour (Optional).

Salt to taste.

White pepper to taste.

1 tbsp Oil.

3 tbsp Water.

Chopped Coriander or Spring onion for garnish.


METHOD.

Cut the gobi into medium sized florets. Wash them cleanly and patch it dry with a tissue.

Heat oil in kadai. Add all the ingredients for frying on cleaned florets and deep fry them till golden brown.

Heat 1 tbsp oil in a pan. Fry chopped ginger , garlic and red chilli. Then, drop in the onions and capsicum with a pinch of salt. Make sure not to fry for long. Will be tasty only if its little bit crunchy.

Add all the sause, ajinamoto and white pepper. Then add 3 tbsp water. If you prefer to add red colour, then this is the right stage to add next so that it mix up equally in water. Add lastly the fried florets. Saute them for few min until all the florets gets well coated with the sause.

Garnish with coriander or spring onions.

EGG CHICKEN FRIED RICE.

Egg and chicken is very good combo and goes well specially when it comes with rice. I followed the same usual method preparing normal chinese chicken fried rice but to make it more attrative I garnished with scrambled eggs which resulted in yummy, fulfillng meal. Here is how I prepared.



INGREDIENTS.

1 Cup Cooked Basmati rice.

1/2 Cup Veggies ( carrots, capsicum, cabbage, peas and corns)

1/2 Cup Boiled Chicken pieces.

2 tbsp Chopped Onions.

1 tbsp Ginger- Garlic paste.

1 tbsp Soya sause.

1 tbsp Hot sause.

Butter accordingly.

Salt and pepper to taste.

Spring onions for garnish.

INGREDIENTS FOR SCRAMBLED EGGS.

1 tsp Oil.

3 eggs.

1 tbps Milk.

1/2 tsp Chopped Garlic.

Salt and pepper to taste.


METHOD

In a pan, boil water. Add the chicken thigs with salt, pinch og ginger- garlic paste, pepper and a drop of soya sause. Later when cooked, cut the chicken pieces with small cubes and keep it aside.

In another pan add butter and fry the onion. Once they turn soft and translucent add the ginger garlic paste and saute for a minute.Then add all the vegetables, salt and pepper. Sprinkle very little water and allow the veggies to cook for two minutes. They should be half cooked. Now add the soya sauce and chilli sauce and lastly cooked chicken pieces.

Add cooked rice to this mixture and stir well. Serve on to a serving bowl. Keep it aside.

Meanwhile beat the eggs well into a bowl with milk, salt and pepper. Heat oil in a pan. Add garlic and the egg mixuture. Stir it well till the eggs are cooked.

Final stage, garnish scrambled eggs on the top of the fried rice and serve hot with manchurians as a side dish.

VEGETABLE MANCHURIAN

All types of manchurians are my standard order in chinese restaurants. That is the best side dish that goes well with fried rice or noodles etc etc. Actually my hubby came up with the idea of making veg manchurian. So both of us enjoyed preparing a new dish and it was too good with egg noodles. We tried both dry and gravy type. I liked dry manchurian the best. No doubt you would too fall in love with it.



INGREDIENTS FOR MAKING DUMPLING.

3/4 cup Grated Cabbage.

1/2 cup Grated Carrots.

1/2 cup Finely Chopped Capsicum.

4 Finely Chopped Garlic.

1 Chopped Green chilli.

2 tbsp All purpose flour.

1 tsp Rava.

1/2 tsp Soya sause.

1 tbsp Hot sause.

1/2 tbsp Tomato sause.

Salt and pepper to taste.

Oil for deep fry.

INGREDIENTS FOR GRAVY.

1 Chopped Onions.

1/2 Capsicum.

1 tbsp Ginger Garlic paste.

2 tbsp Soya sause.

1 tbsp Tobasco sause.

1/2 tsp Hot sause.

2 tsp Cornflour paste.

1 tsp Oil.


METHOD.

Heat a pan full of water. When it starts boiling put grated cabbage, carrots and capicum with salt. Simmer for few min. Alll veggie should hlaf cooked. Drain the mixture and patch them dry with tissue. Pu them into a bowl. Mix rest of all the ingredients except oil. The mixture should be tight enough. Make small balls and keep it aside.

Heat oil in pan. Deep fry them till it turns golden brown.


Heat little oil in another pan and fry the chopped onions, ginger-garlic paste. Then add capsicum and saute them for a while. Add the 3 sauses and finally add the fried veg dumpling.

Serve hot dry with garnish of coriander leaves.

For gravy, add required amount of water. Allow the mixture to boil. At this time add cornflour paste to thicken up the gravy. Garnish with chopped spring onions or coriander leaves.


Serve with ur favourite items.

PINEAPPLE FISH NOODLES

I know it sounds different. As of now you all would have known pineapple fruit is one of our favourite fruit specially for my hubby. He loves making different recipe using pinapple fruit and he does, out of which few comes success. This is one of them. (few more recipe to come) :) Wonderful additition to this recipe are the fish piece.The real flavour comes out when the fish and the pineapple piece are fully cooked with noodles and thats what this is special. You can feel the sweetness, tangyness and spicy too in this whole meal. I personally really liked this recipe so much. Perfect to have with gobi or mushroom manchurian as a sidedish. Yum..

INGREDIENTS FOR MARINATING FISH.

1 Tilapia Fillet.

1 tbsp Chilli pd.

1/2 tsp Turmeric pd.

Pinch of Hing.

Salt to taste.

INGREDIENTS FOR MAKING THE REST.

1 Pack Egg Noodles(Cooked)

1 Big Onion.

2 tbsp Ginger-Garlic paste.

1/2 Cup Pinapple pieces.

1 1/2 tbsp Soya sause.

1 tbsp Worchestershire sause.

1/2 tsp Chilli sause (Optional)

1 tbsp Red curry paste.(Thai)

Salt to taste.

Oil.

GARNISH.

Coriande leaves.
Pinapple pieces.

Grape.


METHOD.

Cut fish into small piece and marinate them with above ingredients for about half an hour.

Heat a pan with oil. Fry onion and gingergarlic paste. Throw in rest of the ingredients from pinapple piece till salt. Make sure you add salt very less because these sause and also the marinated fish contains salt.

Later on add few drops of water and drop th marinated fish. Cook till its done.

Lastly add cooked noodles and garnish with coriander leaves few fresh pinapple pieces and grape.

Serve hot.

RED EGG NOODLES

Red noodles are nothing but noodles made of red rice. It made me to take that packet of noodles when I saw for the first time in Indian grocery shop. This I prepared our normal version of chinese noodles. Red egg noodles can make a wholesome meal on its own .

INGREDIENTS.

1/2 packet Red noodles.

1 Onion.

1 1/2 cup Length wise cutted veggies.(carrot,beans,mushroom,capsicum)

2 Egg.

1 tbs Chopped Ginger.

1 tbs Chopped Garlic.

2 tbsp Soya sause.
1 tbsp Tomato sause.

1/2 tsp Chili sause.

1 tbs Oil.

Salt and pepper to taste.

GARNISH.

Spring onions or Coriander leaves.

METHOD.

Cook noodles as per the instruction given on the pack. Drain them and keep it aside.


Heat some oil in a pan. Add fresh ginger and garlic. Saute for few sec and then add onion, and the veggies and salt to taste. Make sure the onions and veggies are half cooked. Make a small well in the middle and break 2 eggs and sramble it.

Now add soyasause , ketchup and chilli sause. Adjust salt and pepper.

At this stage add the cooked noodles. Cover with a lid and cook for 5 min under medium flame.

Garnish with coriander leaves.

MUSHROOM MANCHURIAN FRY

Most of the people are very fond of chinese cuisine. So do I. When it comes to prepare chinese cuisine at home, I make mostly noodles , fried rice or Gobi manchurian. This time tryed making with mushroom which is just similar to gobi manchurian. These mushrooms are soft , juicy and gives great taste when you have a bite. This can be had as a snack or as sidedish with noodles or fried rice.



INGREDIENTS FOR MARINATING MUSHROOM.

200 gm Button mushrooms

2 tsp Ginger garlic paste

2tsp Soy sauce

1 tsp Vinegar

2 tsp Red chilli powder

1/2 tsp pepper powder

2 tsp Corn flour

1 Egg

Salt to taste

FOR DRY FRY

1/2 Cup Shallots

2 tsp Chopped green chillies

2 tsp Chopped garlic

2 tsp Chopped ginger

2 tbsp Soya sause

1 tbsp Tomato sause

1/2 tsp Chili sause

1 tbs Oil

Salt to taste

GARNISH

Spring onions or coriander leaves.

METHOD

Cut the mushrooms into halves. In a bowl mix all the marinated item along with the mushrooms. Keep it aside for half an hour.

Heat oil in kadai and deep fry the mushrooms in it, for about 1 to 2 min.

Heat little oil in another pan and fry the chopped onions, ginger, garlic and green chillies. Add the 3 sauses and finally add the fried mushroom and mix well. Adjust salt.

Serve on plate and garnish with spring onions or coriander leaves. I topped each piece with toothpick.

SOYA MANCHURIAN

Soya is supposed to be very good for women. It has full of Proteins and natural minerals. I have noticed most of the people don't like to eat those big chunks as it taste like flesh. But in case of me and my daughter smera we just love the taste and its texture. I also use the soya granules which can be added along with the fillings for samosas. Here i come up with my manchurian chinese version.





INGREDIENTS.

1 Diced Onion.

1 Diced Capsiums.

2 tbs Soya sause.

2 tbs Tomato ketchup.

1 tbs Chilli sause

1 tbs Chopped Ginger.

1 tbs Chopped Garlic.

1 1/2 tsp Corn flour.

3 tbs Water.

2 tbs Oil.

Salt to taste.

MARINATION.

100 grms Soya chunks.

1 Egg.

1 tbs Ginger garlic paste.

1 tbs Soya sause.

2 tbs Cornflour.

Salt to taste.

Oil for deep fry.

GARNISH.

Spring onions ( greens part)

METHOD.

Soak soya chunks in 3 cups of boiling water for about 10 min. When it becomes soft , drain the water and squeeze all the water from soya. Repeat the same process for 2 to 3 times to remove the raw smell of soya.

Later marinate the soya with egg , cornflour , ginger garlic paste , soya sause and salt. Keep aside for half an hour.
Mix corn flour with water and keep it aside.

Later deep fry these marinated soya chunks until it gains brown colour and keep it a side.

Heat some oil in a pan. Add fresh ginger and garlic. Saute for few sec and then add onion, capsium and salt to taste. Make sure the onions and capisum are half cooked.

Now add soyasause , ketchup and chilli sause. Sprinkle some water and saute again for a while and bring to boil. At this stage add the mixture of corn flour inorder to get thick gravy.

Lastly add the fried soya chunks and mix well.

Garnish with spring onions and serve hot.

SHRIMPS IN APPLE GRAVY

One of the most popular ingredients under seafood dishes are shrimps and prawns that are enjoyed in many countries of the world. I love shrimps under different kinds of cuisine. Once we have been visited to Chinese hotel where we had shrimps cooked in pineapple gravy. It was a bit sweet and spicy too. One day I thought of preparing the same recipe with apple instead of pineapple. I am sure whoever like the taste of sour and sweet along with mild spiciness in recipe would love this.


INGREDIENTS.

10 Medium Size Shrimps

1 Apple.

1 Diced red onion.

1 tsp Tomato ketchup.

1 tsp Chilli sause.(optional)

1 tbsp Soya sause.

1 tbsp Lime juice.

1 Green chilly.

3 tsp Chopped ginger.

1 tsp Chopped garlic.

1 tsp oil.

Salt and papper to taste.

Chopped scallions for garnish.

METHOD.

Marinate shrimps and diced apple with salt and lime juice for 15 to 20 min. Apple can be diced along with skin, but here I have removed the apples skin and cut in to small pieces. Meanwhile in a pan heat oil and add ginger and garlic. Fry them till the raw smell is off. Later add diced onions and fry them half cooked. Add chopped chilies, soya sauce and tomato ketchup in the mix and stir it for a while. Finally add the marinated apple and shrimp mixture with half cup of water. Add salt and pepper according to taste. Close the lid and cook for 10 min. Garnish with chopped scallions.


Serve hot with 2 min maggi noodles. Njoy friends.
