PHOHA STUFFED MODAKS

The most popular one being eaten during 'Ganesh Chaturthi' are the steamed Modaks or Ukdiche Modaks.Thats Bappa's one of the fav delicacy😊 suppa tasty and healthy👍😋Today was Sankasthi chaturthi so, taught of making wheat flour modaks stuffed with normal filling with a a touch of phoha and banana chunks as Prasaad. It tasted so good something different from the normal one. Me and my junior S👧 made modaks in different shapes with so much of additional love💓for Bappa.
NOTE: Stuffing can also be fryed in ghee and then placed. We usually make the non fryed one :)


INGREDIENTS FOR STUFFING.
1/2 Cup Grated Coconut
1/4 Cup Grated Jaggery (more or less)
1/2 Cup Phoha.
1 small ripe Banana
Pinch of Cardamom powder
1 tsp Ghee
Dry fruits (optional)

For the dough, follow the same method you used to make for chappati dough. Make sure instead of oil, add ghee and knead.

METHOD.
In a bowl add in the coconut, jaggery and ghee. Mix well with ur hands. Add in the phoha, dry fruits, banana chunks cum cardamom powder and mix. Keep it aside.
Now take a big portion of the dough and roll them until its flat. Cut them into small circles. Now take each circle and place small portion of stuffing and shape them as you like.Grease the steamer plates and place the modaks. Steam them for about 12 to 15 min. Once done, your shiny textured modaks are ready😀

Bok choy Garlic stir fry

As I have mentioned on my previous post that I am big fan of half fried veggies, herez the next with Bok Choy which is filled with full of fiber, vitamins and minerals. I was lucky enough to get baby bok choy😀Its another wise known as "Chinese Cabbage".This can be eaten raw as well and most offen these are added in soups but I prefer simple Stir fry 😋It light, crunchy and got a mild flavour.

INGREDIENTS
1 Bok Choy 
10 Crushed Garlic cloves
1 tsp Dark Soya sause
1 tsp Black Pepper
Pinch of Oregano
Salt to taste.
Roasted White sesame seeds (optional) for garnish
Butter

METHOD
Trim off the ends. Rinse the bok choy under running water. Slice them in halve lengthwise or remove the individual leaves and rinse. Patch it dry.
Heat butter in a non stick pan. Add garlic and fry them till golden brown. Add in the bok choy and stir fry for few sec. Then add soya sause, salt and black pepper, and roast them until the stalks turns half tender and also till the sause glazes the greens. Lastly sprinkle some oregano and transfer into a serving bowl or a platter. Garnish with roasted white sesame if needed.

BRUSSELS WITH MIRACLE EGG

 Brussels sprouts are high in dietary Fiber and Potassium. Its an excellent source of Vitamin C and Vitamin K. I first tasted these sprouts when we were in US 😃. Fell in love with it the very first moment. These cuties tastes super delicious when its half cooked. Am a huge fan of half cooked veggie, becoz I just adore the crunchiness when we have its bite.

FOR THE STIR FRY BRUSSELS -
Therez no special ingredients needed or proper measurement to mention for this recipe. Just remove the outer leaves. Wash , drain and cut them into 2. Few cook as a whole, but it takes a bit longer to cook. Next, You can just coat them in Olive oil, salt and pepper and roast them in the oven for 15 to 20 mins Or just pan sear them or do a simple stir fry on stovetop the one which I followed.

GANESH CHATURTHI DAY

After the grand celebration of my ''Kaahna's'' b day, here comes my ''Gannu's'' B day celebration😄"Ganapathy Bappa Morya"🙏.Sharing few of my clicks on the special festival. Starting with my Divine Mandir.
Alankar of my Ganapathy. The main gannu's idol which I keep always on this festival for pooja is gifted by my loving Granny😁 and the back side gannu on the swing gifted by my relative. Theres one more mini one which is also special idol given by my amma. Thats the memorable gannu's piece made up of Horsegram😃 

Now the Neivedyam section😁 As always its a Teamwork by RS💪😍. Now the Prasaad list goes like this - Steamed Wheat Modaks, Pineapple Sheera, Basundi, Til laddo, Chakkali, Rice Thattai, Sweet Appe, Panak (Jaggery with dry ginger drink), Fried Modaks, Sweet Poha with Sugarcane, Raagi laddo, Chickpeas Ussli, Curd rice, Fried Potato fry, Puliyogare (tamarind rice), Aravana Payasam, Panchamritham, Dry fruits, Milk, Fruits

A small B day treat for my little Gannu 💗😉💗 Whole Ganesh Chathurthi Platter. Yummm😋
Last but not the least, My next day Project work as I always do with the Puja Flowers.

FLAVOURED YOGURT

This is a Supa Quick Fatak Dessert to have soon after your yummy lunch. I make this whenever I feel lazy😁when I can't go into the kitchen again to make something sweet😐. So I feel this is the best delight to satisfy your tastebuds. Even the kids can make this in jiffy. Only thing you should have your fav Fruit crush and some yogurt in your fridge. 
NOTE: U can also add fresh chopped Fruits matching with ur crush as well to get a nice bite :) Even roasted dry fruits goes well.

INGREDIENTS
2 Tbsp Fruit Crush ( I used Black Currant and Pineapple crush) add more or less
1 Cup Thick Yogurt.

METHOD
Mix these 2 ingredients together and serve them cold in a serving bowl.

Leftover Rice KA Soft Idlies

Yeah you heard it right 😃Idlies made of leftover cooked rice. I had some leftover rice which was prepared during my Onam Sadya :) It was great celebrating with our dear friends. Sharing our Sadya pic as well. I forgot to keep one extra payasam 😕orelse it would have been a perfect pic.
Now that I had extra rice I taught of utilising making Idlies and that was my first try. Usually I end up making Tomato rice or Lemon rice or Carrot rice and the list goes on an on😜
These Idlies came out super soft and Tasted delicious with 'Sweet Potato Spicy Umman'. The best part in this recipe is it does not need fermentation. The addition of ENO SALT works well. Now lets dig into the recipe.

INGREDIENTS
1 1/2 Cup Cooked Rice
1 Cup Roasted Rava
1 Cup Yogurt
1 1/4 Cup Water
Salt to taste
1 Small pack Eno

METHOD
Blend rice with water and make it into a smooth paste. Transfer them into a bowl. Now add rest of the ingredients one by one. Mix well and let it sit for about half an hour. After that add a bit water if necessary as the rava absorb the water content. Now pour the batter into the greased Idli mould and steam for about 10 to 12 min under low flame. Enjoy hot hot with ur fav dip 😁
