FRENCH CROISSANTS

It was a great pleasure trying out Croissants for the first time which is just similar to the puff pastries. The dough is  layered with soft butter and then folded and rolled many times. The best combo breakfast with croissants is the butter or jam. And the fun part is you can shape them as you like :) The texture of the croissants should be soft and airy on the inside and golden coloured crusty look on outside :)

BAKED SPIRAL POTATOES IN CHESSY MAYO

Spiral Potatoes that are skewered, deep fried are famous snacks which can be seen in malls. We love those so much :) These are said to be Tornado fries which is a popular street food in US, UAE. Here instead of fried once I just tried the baked version. Baked Yummy and cheesy Spiral potatoes sounds super cool for kids. And why not if its homemade, anyone would love to dig into them. These are too tasty and can be easily prepared without using a machine or a bamboo stick. These are healthier too.

INGREDIENTS

1 Potato

1 tbsp Oil

Garlic powder to sprinkle

2 tsp Chilly powder

2 Cheese slice

Mayonnaise as needed

Salt to taste

METHOD
Clean the potatoes well under running water and wipe them using wet cloth. Using knife, cut the potatoes in spiral.  Place them on the greased baking tray. Give a oil spread and sprinkle with salt and garlic powder. Bake them on a preheated oven for 190 degree for about 30 to 35 min or until its well baked.  Once its done, take out the tray, sprinkle with chilly powder and place sliced cheese on top and keep it inside the oven. The cheese begins to melt. Once its fully melted, transfer them on a plate and drop up the mayo. Serve hot

GRILLED TANDOORI GOBHI

Grilled tandoori gobhi is one of the popular Indian snack. Actually it should be cooked in traditional clay to get that smoky flavour but as its not possible for me, I prepared using my oven under grilled mode.These tender and spiced grilled gobhi goes well with any kinds of breads or buns or can be eaten as it is as a side dish. Same process can be prepared using potatoes or mushrooms or paneer as well. People who dont have oven,can use grilled pan or simple pan fry method. Its equally tastes good.
INGREDIENTS

1 Cups of Steamed Cauliflower

1/2 Cup Hung curd

1 tsp Ginger garlic paste

1 tsp Chilly powder

1/2 tsp Turmeric powder

2 tsp Coriander jeera powder

2 tsp Tandoori masala

2 tbsp Roasted besan

2 tsp Kasuri methi

1 tsp Lime juice

Oil for brushing

Salt to taste

chaat masala to sprinkle

METHOD
In a bowl first drop the curd and add in all the ingredients one by one except cauliflower. Mix them well and mix it with cauliflower. Let it sit in refrigerator for an hour.  Now preheat the oven for 180 degree. Grease grilled rack and place the cauliflower one by one. Brush with oil and bake it for 30 to 35 min or until its cooked and crisp. In middle turn its sides so that the cauliflower gets cooked evenly on both the sides.

Place them on a plate. Sprinkle with some chaat masala and serve with your fav dip :)

BAKED CHICKEN PASTA IN CREAMY WHITE SAUSE

Baked melted cheesy pasta combined with veggie or meat is just comfort food at its best.  I just love the flavour of Italian cuisine as it has a mix of herbs and of course the cheese which tastes cheeeesy ;)You can add any type of veggie or meat for this dish. Here I have stored white sauce in advance so that the preparation could finish up in jiffy. The refrigerated white sauce probably stays fresh for 2 weeks :) You can involve ur kids for layering :)
INGREDIENTS FOR WHITE SAUCE

4 tbsp Butter

2 tbsp Maida

2 Cups Milk

2 Cheese slice

Pinch of Salt

Pinch of Pepper pd

OTHER INGREDIENTS

1 Cup Cooked Pasta

3 Chicken Sausages

1/4 Cup Mushrooms

1 tbsp Oregano

2 tsp Red chilly flakes

Grated Mozzarella cheese

METHOD.
To make white sauce, heat a non stick pan adding butter. Make sure to keep the flame on low. Add maida and cook it till the raw flavour goes out. Add milk slowly and keep stirring the mixture in order to avoid lumps. Once the sauce becomes thick, add the cheese and mix well till the cheese melts. Season with salt and pepper. Remove from flame.
Heat butter in a kadai, and fry mushrooms and chopped chicken sausage till it becomes brown.
Now preheat the oven for 180 degree. Take a baking bowl. Arrange half of boiled pasta and above that half of mushroom and chicken sausage fry. Next layer them with white sauce and grated cheese.
Repeat the same layer again and end up added lots of cheese. Sprinkle with oregano and chilly flakes on top.
Bake them under 200 degree for 30 min or until the cheese melts on top.
Serve hot

CHEESY SOYA IN CAPSICUM CUPS

Cheese filled snacks are liked not only by kids but also adults who loves to have dairy products. My family is crazy of milk products and when it comes to cheese they will adore like anything. On my today's recipe I prepared soya masala which is filled on the bed of capsicum and is topped with cheese. This tastes super awesome and is the best ever filling snack. Instead of soya, you can add any type of ingredient or leftover veggies as well.
INGREDIENTS

1 Capsicum

1/2 Cup Cooked soya

1 Pearl Onion

1/4 tsp Ginger Garlic paste

Pinch of Pepper pd

Salt to taste

1 tsp Butter.

Handful of Grated Cheese.

METHOD

Cut the cleaned capsicum veggie and discard the seeds. Sprinkle some salt and place them on a baking sheet. Heat butter in a oil and fry the onion for few seconds. Then add ginger garlic paste and saute till the raw smell disappears. Add pepper powder and remove from flame. Let it cool down for 5 min. Now fill the soya in the capsicum cups and garnish with grated cheese. Bake them at 180 degree for 10 min.

Serve hot.

ITALIAN BAKED POTATOES

Potatoes are the real treat for kids. Most of them love that veggie like anything. These baked one are really delicious and healthy and also you can tailor it to fit any vegetables as well. A mix of Italian seasoning with garlic powder and with a mild heat of red flakes ends with an exotic utterly delight. Do try this for sure and no doubt your little one would adore like anything.
INGREDIENTS

3 Big Potato Wedges.

1 1/2 tbsp Italian seasoning

2 tsp Garlic powder.

1 tbsp Olive oil.

1/2 tsp Red chilly flakes.

Pinch of Pepper powder.

Salt to taste.

METHOD

Preheat the oven to 200°C.

Peel the potatoes and cut them into wedges and let it sit in water for about 5 min. Later drain the water and patch it dry. Keep it aside.

In a bowl, add olive oil, garlic powder, Italian seasoning, red chilly flakes, pepper pd, salt and mix. Add in the potatoes and rub them well till the herb mixture are well coated.
Transfer them to the greased baking tray and bake them for about 30 to 35 min or until the potatoes are cooked while stirring them  twice in between.

Serve hot with ur favourite dip.

TUTTY FRUITY COOKIES

This cookies are so easy, tempting and crumbly to make. Though I dont have convection oven, I tried making on Tandoor which came out quiet well and crunchy as well. This is prepared with all purpose flour, powdered sugar, butter, milk pd,and ofcourse tutty fruity which is the main ingredient and the best one loved by our kids :) I got this amazing recipe from ruchiskitchen.com. Thank you for sharing this recipe. My daughter just adore this cookies a lot. The recipe mentioned to add rose water which was optional but I did not use it. Instead of that I added Vanilla essense. BREAD TOFU PIZZA

Bread pizza's might be one of the best snacks for kids on behalf of real pizza's. Easy to prepare with different healthy toppings, The topping I have used is yellow, red and green bell peppers with tofu. Tofu is a food made by coagulating soy milk that are protein rich and is a popular substitute for meat or diary in a variety of dishes. I know most of the people specially kids hates tofu because of its unique smell and weird texture. But once in while can be used when you think of its nutritious value. Its filling and inviting for kiddo's when tofu is mixed up with other veggies along with a  mild spices. It can be served with a glass of fruit juices.



INGREDIENTS.

2 Wheat Bread slice.

1 Small Onion.

2 Cloves of Garlic.

1/2 Cup bell peppers ( red, yellow and green).

1/4 Cup Diced Tofu.

1 tbsp Magic Masala pd or Garam masala.

1/4 tsp Cumin pd.

Cheese as per needed.

Salt and pepper to taste.

Butter as per needed.

Tomato sauce ( Optional )




METHOD.

In a pan, heat butter. Add garlic and onion with salt and saute till its half fried. Add the veggies and tofu and fry them until its soft. Then add the magic masala or garam masala pd , cumin pd and fry for another 1 min. Remove from heat.

Now spread tomato sauce or butter on each bread slice and place the veggie mixture on the top. Top up with grated cheese and bake or micro for 2 min or cook till the cheese melts.

CHICKEN TIKKA

Any recipe of chicken makes me crazy, specifically when its all about the starters. Yumm whenever we visit restaurents I do order somthing which is of dry and spicy and one among them is the chicken tikka. Its got a unique taste of grilled flavour when its being marinated with yogurt along with Indian spices that ends up into a heavenly awesome appetizer. Its best to have during summer days when the same is prepared under bbq process. We had great time having chicken tikka with cheessy pastas for dinner and I felt really good, specially when my daughter said she just loved it. Veggie people can follow the same instruction with eggplant and cauliflower.



INGREDIENTS.

1 pound Chicken thighs boneless.

1/2 Cup Yogurt.

1 1/2 tbsp Garlic paste.

1 tbsp Ginger paste.

2 tsp Chilli Powder.

1 tsp Turmeric powder.

2 tbsp Chicken masala.

Pinch of Red colour (optional)

Salt and Pepper to taste.

1 tbsp Oil.

Pinch of Chaat masala.




METHOD.

Clean and wash the chicken pieces and cut them into medium sized chunks. Place the cut pieces on tissue to remove the excess water. Also soak skewers in water for 5 min before use to avoid the burning smell of them.

In a bowl add yogurt and rest of the ingredients one by one except chaat masala.

Add the chicken piece and let it sit for 1 hour in fridge.

After 1 hour, preheat oven under grill section on medium temperature.

Put the marinated chicken chunks on skewers and place them on the tray. Drizzle with some oil and turn occasionally until its well cooked all over the sides.

Sprinkle with some chaat masala on top and Serve hot with shredded cabbage and onions.

ROASTED PEPPERY PEANUTS

This is the perfect crunchy namkeens that can be taken along with a sip of tea as an evening snack. Its spicy with a touch of crushed black peppers, easy to cook and is easy to serve. One can reduce the quantity of heat according to their taste. Its stays fresh for a month if it is stored in air tight containers. Do try this awesome spicy peanut recipe and satisfy ur tasty buds :)


INGREDIENTS FOR ROASTED PEANUTS.

2 Cups Raw peanuts.

Pinch of water.

1/2 tsp Salt.

INGREDIENTS FOR MASALA.

1 tbsp Crushed Black Peppers.

1 tsp Chilli powder.

1/2 tsp Turmeric powder.

1 tsp Oil.

Dash of Hing.

Salt to taste.


METHOD.

In a bowl, mix peanuts and salt with a pinch of water and micro for about 6 to 7 min. Stir in to between for every 2 min to avoid burning taste. Make sure peanuts cont to cook even after removing from microwave so be carful not to turn brown.

Allow to cool and remove its shell by rubbing those in hands and break them into 2.

In a pan, heat oil. Add all the spice together and fry for 4 to 5 sec.

Add the roasted peanuts and saute till all masala's are well mixed up with peanuts.



Serve hot.

BAKED TILAPIA

Having fish fry with lunch or dinner is a comfort meal for me. Its the fabulous snack that I can have at any time. There are couple of varieties of preparation, but I like to try with one simple normal masala frequently. The fish I have used is Tilapia but its equally good with Pomfret and shrimps also.


INGREDIENTS

1 Tilapia fish.

3 tsp Chilli powder.

1 tsp Turmeric powder.

1/2 tsp Hing.

1 tsp Crushed pepper.

2 tbsp Coconut oil.

2 tbsp Lemon juice.

Salt to taste.

METHOD.

Clean the fish and score it by making cuts an inch or more. Wash and pat it dry with tissue.

Season fish with salt and lemon juice and allow to rest for 5 min.


Meanwhile, in a bowl, mix rest all the above ingredients.


Marinate with masala both inside and outside of the fish and allow to rest for half an hour.


Bake it in an pre heated oven for 15 to 20 min or till its done. Fish should flake easily with a fork when its done.

COCONUT PEANUT COOKIE

I am very fond of cookies specially nankatai. I tired many times to make nankatai, but dont know why it was not at all perfect like that of my mom used to make it. My mom says due to difference in fat it might not be perfect. She was using dalda and I first tried with ghee and secondly with butter but alas, I was not getting that proper shape. It used to flatten like a mini pancakes but nothing difference in taste. It was the same. So I was on cookie hunt, when I came across tempting, attracted and incredible cookies on ''ROOPA'S BLOG'' . It was very easy, came together rather quickly and tasted superb. I was sooo happy when I saw my cookies came out perfect just like her and was delicious indeed. The unique ingredient was the addition of grated coconut that I liked the most and also nice to have crushed peanuts in each and every bite.


INGREDIENTS

1 Cup Maida.

1/2 Cup Grated Coconut.

1/2 Cup Unsalted butter (at room temperature).

1/2 Cup Sugar.

1/2 Cup Roasted Crushed Peanuts. (unsalted)

Pinch of Vanilla essense.

Kismish for garnish.


METHOD

Preheat oven at 350 degree F.

In a mixing bowl mix butter and sugar well. Add maida and crushed peanuts with a pinch of vanilla essence. Chill the mixture for 15 min. This makes the dough a bit tight and easy to spread on the baking sheet. Make a small balls and press them slighly with your palm and place them on baking sheet.

Bake them in the preheated oven for 12-13 minutes or until the bottom of the cookie becomes light brown. Remove from the oven and place them on a cooling rack. These cookies becomes crunchy when they are cooled. Garnish with kismish to make more inviting.

ROASTED BRUSSELS SPROUTS

Brussels was somthing interesting that I wanted to try for long. Most of the time I was away from brussels because that was quiet expensive. But I wanted to know what it tastes like so took some. I adapted this roasted recipe from ''Barefoot Contessa'' Food network. It tastes good just like mini cabbages. When I had a bite, it was just crispy on onside and tender inside. Also I liked the crunchy flavour just the way I like them all on my baked recipe. I served them with carrots , green bellpeppers and boiled eggs. It is a perfect healthy snack too.


INGREDIENTS

5 Brussels sprouts.

1 tbs Oil.

Salt and pepper to taste.

1 tsp Lemon juice.

METHOD.

Preheat oven to 350 F.

Cut off the ends of brussels and remove the outer leaves. If its too big, cut them into 2 halves.


In a bowl, add the brussels, salt and pepper and keep them for 15 min.


Transfer them to a aluminium sheet and roast them for 30 min or until the outer skin turns crisp. Then turn them on another side and roast them till the brussels turns brown.

Place them on a plate and drizzle with lime juice.

Serve hot with other veggie.

EGG MUFFINS

Are you a egg lover? If Yes do try this tasty and healthy snack. Its soo fluffy and moist that anyone can have it at any time. It would be somthing new for the kids rather that offering them an omelet or scrambled one or Indian type bhurjies so n so.This would be a lovly platter for them if its garnished with their favourite sause specially tomato ketchup because my kiddo love just the same way :) . This is also served as an breakfast item. It makes whole some filling when you have it along with fresh juice. Any of ur favourites veggies or non- veg like sliced ham, bacon shredded chicken can also be added in the egg mixture. The measurement I have specified is apporoximate amounts as you can put more or less depending on what you like.


INGREDIENTS

5 Eggs.

1 Chopped Spring Onions.

2 tbsp Chopped Tomatoes.

1/4 Cup Milk.

2 tbsp Chopped Capsicum.

2 tbsp Chopped Mushrooms.

1/4 Cup Grated Cheese.

Salt and pepper to taste.

METHOD

Preheat oven for 350 degree.

In a bowl, beat eggs and whisk it. Add each ingredient one by one.

Grease the muffins tray and fill the mixture about 3/4 th of the way.


Bake them for atleast for half an hour or until a knief inserted comes out clean. When its done loosen them around with a knife.

Garnish with ur favourites items.

EGGPLANT CHEDDAR

I got this classic Italian recipe from food network. Its actually named as ''Eggplant Parmesan''. I just named it as 'Cheddar' because I used cheddar cheese instead of parmesan. Like the recipe lasangna, this too can be prepared as layers. But I have prepered under single layer. We really liked it soo much and its outstanding and incredibly easy to make.If you need a quick supper,somthing filling then this recipe would be perfect. It just taste as good as the 'Chicken Cheddar'. There is no particular measurment for the amount of sause and cheese. Add according to ur choice. This eggplant cheddar goes well as a side dish with any pasta recipe or speghetti with meat balls.


INGREDIENTS.

4 Sliced Eggplant.

Pasta sause. [any of ur fav choice]

2 Cloves of chopped Garlic (Or) Garlic powder.

1/2 cup All purpose flour.

2 Eggs.

1 cup Italian seasoned Bread crumbs.

Handful of cheese on each slice.[ I used mixed of mozzarella and cheddar]

Salt and pepper to taste.

1 tsp Oil.

METHOD.

Cut eggplant into circle about 1/4 inch slices. Sprinkle them with salt and pepper. Let it sit for 15 min. Thus keeping for few min salt will release some of its moisture. Wipe up the excess water with the help of tissue.


In a bowl break egg and whisk it. It should be enough to dip the marinated eggplants. On a plate combine flour, salt and pepper. On another plate spread breadcrumbs. Coat the eggplants into the flour mixture on both the sides. Then dip into egg mixture and finally to the bread crumbs mixture, pressing lightly on both the sides.


Heat 1 tbs oil in a pan. Add garlic and place the eggplant slices gently. On a low heat cook it on both the sides until slight brown. Drain on the paper towels.

Preheat the oven to 350 F. Now spread the pasta sause as per needed on the baking dish. Place the eggplant slice. Again top it with some more pasta sause.

Lastly spread the slices with cheese.

Bake them for about 30 min or until the cheese melts and form a slight borwn colour. Allow it to sit for another 10 min. Serve hot.
