PLANTAIN OATS PANCAKE

Most of the time I used to end up my ripe plantain making halwa or fritters or just roasted plantain ghee fry. Then currently, I started making plantain pancakes for my little one as its the best healthy delicious snack. The addition of oats and wheat flour makes the dish nutritious and perfect.  She prefer this delight soon after coming from school and wont forget to appreciate its taste ;) She simply loves it.


INGREDIENTS

1 Ripe Plantain.

1 Egg.

1/2 Cup Oats.

1/4 Cup Maida or Wheat flour.

1 Cup or a bit less Milk.(depends on thickness)

1/2 tsp of Soda powder.

Sugar as per needed.

Pinch of Salt.

Butter.

Pinch of Vanilla essence.

METHOD

Peel plantain, slice and drop them into the blender followed by the rest of the ingredients.

Bled for a min and transfer them into a bowl. Leave the mixture for about half an hour.

Heat 1 tsp of butter on a griddle. Once the butter is hot, pour the batter into pancakes shapes.

Cook until the top layer looks fairly dry with little bubbles on it. Flip and cook on other side.

Serve hot on plate with dollop of butter or honey :)

PINEAPPLE HALWA - 200th POST.

Hai all,

Happy to make my 200th post. I am really so excited and happy to share with u all my moment of joy. My heartfelt and sincere thanks to my family, my relatives, blogger friends and to my facebook friends who has supported me alot with their positive feedback. With appreciation and comments from all you guys, I could possibility continue my blogging world till today. Once again a big Thanks to all for your love and support.

On this pleasant day, I wanted to prepare some sweet dish, something out of my fav fruit ''PINEAPPLE'' and thats '' PINEAPPLE HALWA''. Very simple, lip smacking  recipe with limited ingredients. Its the blend of pineapple puree mixed up with khoya. Too much of a good thing can be delicious, you will discover when u have a bite of yummy halwa along with the nuts and kismish.


INGREDIENTS.

2 Cups Pineapple puree.

3/4  Cup Sugar. ( Depending on the sweetness of pineapple, u can adjust the amount of sugar)

1/2 Cup Ghee.

1/2 Cup Khoya.

Yellow colour, ( Optional )

Dry fruits as per needed. ( I use almonds and kishmis)

METHOD.

Heat 3 tbsp of ghee in a pan. Drop in pineapple puree and fry on medium heat for 10 min. Add sugar, khoya and stir well making sure it does not stick to the bottom of the pan. When sugar is well mixed, add remaining ghee and stir continuously well on medium heat until the halwa starts to leave the sides of the pan. Transfer the halwa on a greased plate and decor with ur fav dry fruits. Serve hot :)

CREAMY PUMPKIN SOUP

A delicious soupy combination of carrots, onion and pumpkin. Its a soup flavoured with a touch of garlic and served garnished with heavy cream. Yet nutritious, healthy and refreshing soup.



INGREDIENTS.

1 Cup Pumpkin pieces.

1/4 Cup Carrots.

1 Small Onion.

1 Cloves of Garlic.

1 Reduced Milk.

1 tsp Butter.

Water or Vegetable stock as needed.

Salt and Pepper as per taste.

METHOD.

Heat butter in a pan. Add garlic, onions, pumpkin and carrots and saute. Add required quantity of water or stock into it. Cover and cook till all the ingredients becomes tender. Blend them and again pour into another pan. Add milk and allow the mixture to boil. Season with salt and pepper. Add a spoon of heavy cream and serve hot hot. :)

BANANA MILKSHAKE WITH WATERMELON TOPPING

Banana milkshakes are just perfect for breakfast and are very good source of calcium which is an important component in day today's healthy diet. Its filling, nutritious and comforting when therez an attractive handmade watermelon's cup topped on. Looks very inviting for kids and a simple way to have 2 fruits one at a time :) My hubby helped me alot making this creative  watermelon cups :)


INGREDIENTS.

1 Ripe Banana.

1 1/2 Cup Chilled Milk.

1/2 tsp Butter.

Sugar as needed.



METHOD.

Skin and grind bananas for a min . Then add milk, sugar and butter and blend everything into mixer for 2 min

Top them with watermelon cups and serve chill.

GARLIC CHICKEN LOLLYPOPS

It is a simple dry preparation of chicken sauteed in hot and spicy tomato sauce and deep fried. It makes a wonderful tasty starters for get to gather parties. Also tastes great with noodles and fried rice. Here either fried lollipops with tomato dip can be used or u can just mix the whole dip along with  fried lollipops. Both options taste good.



INGREDIENTS FOR MARINATING LOLLIPOPS.

4 Big Chicken Lollipops.

1 tsp Ginger Garlic paste.

1 tsp Soy sauce.

1 tsp Green chilly Paste.

1 Egg.

1/4 Maida.

Red Colour (optional)

Salt and Pepper to taste.

Oil for deep fry.

METHOD.

Marinate chicken lollipops in the above given paste except egg and maida for at least 1 hour. In a bowl, beat egg with salt and pepper and keep it aside. Spread maida on plate.  Now take each marinated lollipops and roll on maida and then dip it into egg mixture and again roll it in maida. Repeat the same procedure with rest of the lollipops. Heat oil in a pan and deep fry them until it turns golden brown.


INGREDIENTS FOR HOT AND SPICY TOMATO SAUCE.

10 Pods of Garlic.

1/2 Cup Tomato ketchup ( i used hot and spicy one )

2 tsp Red Chilly pd.

1 tsp Vinegar.

1 tbsp Butter.

METHOD.

Heat butter. Add garlic pods and fry. Then add chilly pd, tomato sauce and vinegar and bring them to boil. You can serve the sauce with lollipops or u can mix the lollipops with the sauce in pan. Serve hot.
