Few days ago, I bought lots of carrots and I was planning to make carrot halwa. But I changed my mind and ended up making carrot kheer which came out really delicious and yummy. Here there were 2 main ingredients as one is carrots and other is the dates, where I wanted to keep its own sweetness in the whole recipe. So its very healthy and nutritious as therez absence of sugar. Both kids and adults will enjoy having this delight. For extra tasty kheer try adding almond milk instead of normal one. Do try this :)
INGREDIENTS
2 Small Steamed Carrots.
2 Cups Cold Milk. ( 1 cup hot milk)
8 to 10 Dates (seedless)
8 to 10 Cashew nuts.
Pinch of Cardamom pd.
METHOD
Soak both dates and cashews in 1 cup of hot milk for half an hour. Now grind the carrots first followed by the soaked dates and cashew. So that its well grind ed into a smooth thick paste. Now add milk along with the leftover soaked milk and cardamom pd and blend it thoroughly for about 1 min. Serve chill with a cherry on its side or garnish with dry fruits just as u like it.
